Feta Shrimp Pasta

As written this recipe was too dry. As other reviewer mentioned, there definitely wasn't enough sauce for the amount of pasta used. What I did to combat that problem was after I cooked the onion and shrimp, I transferred them to a bowl and added white wine to the skillet. I reduced the wine and used that for my sauce. I also added sun-dried tomatoes and fresh parsley for extra flavor.

Baked Cod

The first time I made this I was not impressed. We thought the delicate flavored cod was overpowered by the ranch dressing. The second time I made this I used mayo thinned out with a little squeeze of fresh lemon. I also used panko breadcrumbs instead of the crushed croutons and a little salt and lemon peel with the parsley.

Pumpkin Gingerbread

This was delicious! I came very close to only adding 2 cups of sugar but decided to make this as written the first time and see what I would change, if needed. I wouldn't change a thing! It was moist, not too sweet and the spices were perfect. This is what I'll be having for a quick breakfast the morning of Black Friday.

Apple Pie by Grandma Ople

Not only is this the best pie I've every made but the best pie I've ever eaten! I did add cinnamon and a little nutmeg as per so many reviewer and I also made a homemade crust. The crust can make or break a pie so definitely make one.

Shrimp, Broccoli, and Sun-dried Tomatoes Scampi with Angel Hair

This was so simple to throw together and we all loved it! I don't like boiled broccoli so I cooked the broccoli in the saute pan, adding it before the shrimp. I used elbow pasta just because that's what I had in the house.

Quick Lemon Dijon Chicken

The only thing I added to this was some minced garlic 20 seconds before the lemon and lime juices were added and it was absolutely delicious! I served it over brown rice with a side of broccoli. My whole family loved it!

White Chocolate Fruit Tart

This was not only delicious but it was also very easy to make. I really liked the shortbread cookie crust and the filling was to die for! For the fruit I used blueberries, strawberries and kiwi and I glazed it with warmed up apricot preserve instead of the glaze called for.

Cake Balls

If you put in a whole container of frosting you will have a gooey ball and it will taste like uncooked cake when you're done. Yuck. I find that just half of the frosting is plenty. I also use candy melts from the craft store instead of the bark.

Michael's Foccacia Bread

I love foccacia bread and I've made it many times. This was the first time I've made it with the onions inside the dough and, admittedly, I was afraid the raw onion taste would be too strong for my kids, but that wasn't the case. My kids never even said anything about the onions, although I only used half of a small onion. This was a very good foccacia bread and I will be making it again.

Spinach Pasta Salad

I'm so mad that I found this recipe at the end of summer. I would have made it all summer long if I'd discovered it sooner. This had so much flavor and it was even better the next day. I don't know if my garlic was extra potent but it was a little garlic-y. I did not use canned olives but instead went to Whole Foods and got marinated black olives from the bulk section. They have so much more flavor and taste fresher then the canned stuff.

Classic Dinner Rolls

I prepared this recipe a little then as written but kept the ingredients the same. I did not have RapidRise yeast, only active dry yeast so I bloomed the yeast in the water, milk and sugar then mixed that into all the other ingredients. Knead for about 8-10 minutes. Cover and let rise for 1 hour. Shape into balls and let rise for another hour. Baking degrees and minutes are the same. They turned out beautiful, soft and delicious!

Almond Orange Crusted Chicken with Fennel Arugula Salad

We loved this recipe! I pounded 4 chicken breast to about 1/2 inch thick. I didn't have enough almond mix so I had to make some more. I used whole almonds and pulsed them in a food processor. We loved the flavors in this. The licorice-y fennel (NOT the herb), sweet orange and spicy arugula went very well together.

Dennie's Fresh Lobster Salad

This was incredible! I made this for lunch with some leftover lobster tails that my husband grilled for dinner the night before. I really didn't bat an eye when the recipe called for melted butter like some of the reviewer, saying it would be greasy. I mean, it just makes sense since lobster is at it's best with melted butter. I did add a little lemon juice just because I love lemon juice with my lobster. I topped this salad on a bed of fresh spinach and cherry tomatoes with a glass of white wine. A lunch fit for a queen.

Grandma's Chicken Noodle Soup

I can't believe Grandma didn't put carrots in her recipe. Chicken noodle soup just isn't the same without carrot, so I put them in. I also did not use the cornstarch because I wanted more of a brothy soup. With those simple changes this was a five star recipe.

Pan-Poached Alaskan Salmon Piccata

Linguine with Seafood and Sundried Tomatoes

This was so good! I made this as written and the only thing I would do differently next time is to cut the olive oil and butter down by at least half. It was a little to greasy to us but the flavor was out of this world.

Pesto Tuna Salad with Sun-Dried Tomatoes

I was very excited to try this recipe when I first saw it, but I found the tuna a bit strange with the rest of the ingredients. In my opinion, I think chicken would be much better in this recipe and I will definitely try this again with chicken instead of tuna. Don't get me wrong, I love tuna salad. I eat it as a sandwich at least once a week and, obviously, there are reviewer whom really like this with tuna. I, unfortunately, am not one of them.

Shrimp Lemon Pepper Linguini

This was a wonderful light dish for the summer. It has very little prep time, especially if you buy shrimp that are already de-headed and -de-vained. My only problem was that it wasn't lemony enough for me but I did have a pretty small lemon. Next time I would use a big lemon or even two smaller ones. I also need to say that I did not use 2 teaspoons of pepper but I peppered to taste. I probably use about 1/4 of a teaspoon. Pair this dish with a nice salad, crusty bread and a lovely chardonnay and you've got yourself a great dinner for entertaining.
