Frosted Cranberries

Reviewed: Jan. 22, 2012
Unbelievably simple. Got rave (and I mean RAVE) reviews for these. I almost didn't want to admit how easy they were to make! These will be a regular holiday treat in our house.

Shrimp Francesca

As good as all the reviews stated. I added some quartered roma tomatoes. Will definitely put this in our regular rotation.

White Bean Chicken Chili

Reviewed: Jan. 22, 2012
This was pretty good but I'm not sure I'd call it chili. Added another can of beans and used homemade tomatillo salsa. Also used homemade chicken stock. Hard to go wrong with any soup recipe when you use your own stock. Might make again. My husband liked it.

Baked Shrimp with Feta and Tomato

Reviewed: Apr. 28, 2011
Wasn't really sure about this recipe but decided to try it. I'm not a big vermouth fan but I'm tired of the same old grilled shrimp and was looking for something totally different. Very, very good! I only cooked the shrimp about 3 minutes in the pan so the shrimp wouldn't be overdone. I doubled the garlic and used fresh herbs. This will be a regular in our house from now on.

Zucchini Risotto

Reviewed: Aug. 11, 2010
Good recipe. I did not add the sun-dried tomatoes and I used basil instead of thyme. I also cubed the zucchini and gave it a quick stir-fry before adding it to the risotto. Served with grilled shrimp. Quite tasty.

Mexican Lasagna

Reviewed: Jun. 11, 2010
I was against my better judgment to even try this recipe but I was trying to use up items in my pantry/fridge. I can see how kids might like it but you have even a mild love of pasta this is not the dish for you. Reminds me of something my mom would have served our family in the 80s. She was big on "casseroles". Really just not good.

Almond-Crusted Tilapia

Reviewed: Jul. 10, 2009
Very good. I'd give it 4.5 if I could (I save 5 for truly exceptional recipes). I baked it and it was perfect. Husband asked for it to go into the regular rotation. Next time I will fry it just to taste the difference but I thought baked was delicious.

Best Hot Crab Dip

Reviewed: Aug. 20, 2008
Very good recipe. I come back to this year after year. I looked at my original copy and it was printed in 2003. Use only real crab meat. Canned doesn't do this recipe justice. I don't do the bread bowl - just serve with a variety of crackers and baguette slices. I add a bit more Old Bay (I'm in Maryland - I have to!), only about 1/4 cup of the capers. Also add a bit of crushed red pepper. Recipe is a bit expensive but worth the cost for special events/parties. (I only give 5 stars for truly exceptional recipes - I'd give this 4 1/2 if I could).

Oven Fried Party Drummettes

Reviewed: Jan. 7, 2008
Very tasty and pretty easy too. I used the bread crumbs as mentioned below and they were nice and crispy - and the Italian dressing mix since I had it on hand. I did give them a few minutes under the broiler before serving to add some extra crispness - but not necessary really. Also, I used canola oil instead of butter and that worked great. My hubby is already asking when I'm making them again. Probably this weekend!

Eggnog Cheesecake III

Reviewed: Dec. 28, 2007
Great recipe. I used the Amazingly Good Eggnog recipe on this site for the eggnog and it was delicious. Great recipe. Only change I made was to add a bit of cinnamon to the crust.

Balsamic Roasted Red Potatoes

Reviewed: Dec. 28, 2007
I was really excited to make these but they really didn't taste that great. I typically do a similar recipe with lots of herbs and onion and green pepper. I was looking for a change and tried this. I found the balsamic to be overpowering and detracted from the flavor of the herbs. I won't use this again - I'll do the standard herb roasted potatoes.

Amazingly Good Eggnog

Reviewed: Dec. 28, 2007
I don't give many five star reviews but this deserves it. The BEST eggnog ever! I've made it with rum and rum extract (when we had non-drinkers over) and both were great. I also used this to make eggnog cheesecake and that was delicious as well. Yum!

Spinach Quiche

Very good. I make several times a month. I changed a few things - fresh mushrooms and I add crushed red pepper. I also use whatever cheese I have on hand - it is good with shredded Italian mix. Very versatile recipe.

Daddy's Fried Corn and Onions

Yum, this was great. I used shallots instead of regular onion. I added some minced garlic, chili powder and finely chopped hot red pepper. Yum. It was delicious. I can see endless options to what can be added to this recipe.

Sam's Famous Carrot Cake

Reviewed: Jul. 8, 2007
Yum, this is great. I didn't use coconut or walnuts. Next time, after shredding the carrots in the food processor I might give them a bit more time on the puree cycle. The taste was great but I'd like it better if the carrots weren't so evident. Overall, a great recipe though.

Stuffed Shells IV

Very good but shells got a little mushy. I undercooked them in the pot but they still fell apart. The filling was yummy though. Will definitely make again.

Oven Roasted Potatoes

Reviewed: Oct. 25, 2006
Very good and easy to make. If I'm in a hurry I microwave the cut up potatoes for about 15 minutes before I bake them. Cuts the baking time substantially. I also add cut up red and green peppers, 1/2 cup of bread crumbs and 1/2 cup of freshly grated parmesan cheese. These are a big hit every time I make them - which is frequently!

Lemon Pepper Shrimp with Mustard

Reviewed: Aug. 8, 2006
This is a big hit at home. I use dijon mustard for a bit more flavor. I also double the sauce and use a little cornstarch to thicken it up. I serve with rice or egg noodles.
