One Pot Tuna Casserole

This recipe was quick and easy, but I agree with another reviewer. I am going to saute some onion and celery in the butter prior to adding in the cream of mushroom soup. But over all a very good result!!!

Arroz con Pollo II

This dish was delicious! I used the saffron rice someone suggested and I used 3 1/2 cups of chicken broth and it came out beautifully. I will be making this again!

Gingerbread Biscotti

These were super easy to make. I made them as if I were making pasta with the well method and my bare hands. I did make them with a wooden spoon the first time, but it didn't come together very well, when I attempted to shape them. Everyone so far has requested these as a Christmas gift or has requested the recipe. Just Fabulous!!!!

Pumpkin Pancakes

Ever since I had these at IHOP a couple of weeks ago I have been craving them. Well I found this recipe and it is just like the ones that I had a couple of weeks ago. I used a 1oz scoop to make my pancakes and I flattened them out a little bit, as someone else suggested. I also cooked them until the tops were no longer shinny in appearance. And then flipped them over. I also used 1.5 tsp of pumpkin spice. I also triple sifted the dry ingredients, because some said that they were quite dense. My 5 year old and 2.5 year old LOVED them!!! I also made some cinnamon butter and spread that on top. These will be made again and again!!!

Classic Cooked Egg Nog

This was a good base!! I whipped up 1 pint of whipping cream and folded it into this custard. I also added 1/4 tsp of nutmeg to the base. After I folded in the whipped cream I put in about a jigger of rum, for the whole batch. If you want more rum add more, I just wanted the taste of it. I received many compliments on this egg nog and many liked that it was cooked.

Pistachio Cake I

Waffles I

My children wanted waffles and I was out of waffle mix, so we tried this recipe. The waffles came out nice and fluffy and perfect everytime, better then any waffle mix!!! We will be using this everytime. I also upped the sugar to 1/4 cup and the vanilla to 1 tbs. Perfect. Thank you for sharing.

Waffle Iron Brownies

This recipe had a wonderful chocolate base flavor, but lacked the chocolate punch for chocoholics. So I kicked it up with 1/2 cup of mini chips and it was even better. I will add this to my desert menu.

Fettuccini Carbonara

I made this type of sauce for the very first time after having had it "out". I was very disappointed. By the time the bacon got evenly browned the shallot was burned which added a horrible flavor to the overall finished dish. The extra grease from the combination of the olive oil and bacon made a very heavy feeling on the stomach after only a couple of mouthfuls. If I made this again I would not use the olive oil and I would render the fat off the bacon first. Remove the bacon and then saute the shallot, onion and garlic. I would use 2 eggs, complete with whites or egg substitute to try to keep this heavy dish "light" and I would use 2% milk or evaporated skim milk. I was overall very disappointed in the results.

White Bread I

I made this for the first time last night and I already have another loaf in the bread machine now. It was fantastic!!! When my husband walked through the door he wondered what the wonderful smell was!! It was very tender and delicious. We couldn't wait for it to cool down. Very easy to make, especially with a 3 year old and 7 month old in the house!!

Baked Beans, Texas Ranger

I started to make this recipe last year. My husband requests it all summer long. My 18 month old daughter (last summer) loved it. Suprisingly she did not mind the spiciness of the sauce. It is a great recipe and I am always asked to make it for barbeques!

Southern Living Magazine's Chicken-Fried Steak

This recipe was fabulous!! My husband absolutely loved it!!! I am making it again for my family (mom, dad and sister) tonight! I did follow another reviewer's advice and added more salt and pepper to the meat. I also used a breakfast sausage based gravy instead. I will definately make this more in the future.

Peachy Pork Chops

My husband and I were looking for something different and we stumbled across this recipe. I thought I had peaches, but used apricots instead. The recipe was very easy and still very good with the apricots. Since our 14 month old daughter was eating this too I cut the ginger down to 1/2 tsp and it had just enough of the ginger taste to get her used to it. Thank you very much for a wonderful recipe. This has already been requested by my husband, and only one week later!!!
