Buttermilk Strawberry Shortcake

Very nice taste and texture, though both get progressively less appealing with each day they are leftover, so you definitely want to plan the recipe to make just what you need fresh out of the oven! For the record, I used a 1/3 cup measure when making my biscuits on the pan, to be very exact, and I came out with exactly 10, not 12.

Crumb-Topped Strawberry Rhubarb Pie

A-MA-ZING. So good. Cut the sugar in the filling to about 1 cup, which was plenty, and I used about 1/2 c. pecans because that's what I had, and it was great. I used brown sugar instead of white in the topping and cut it down just a bit, maybe by about a quarter, and since I had room in the pan I just went for it and put it all on even though reviewers said it was quite a bit even when cut down. But who doesn't love crumb topping, right?? It was lovely, I wouldn't do it any other way. The cinnamon, nutmeg, and pecans add such a nice, rich flavor to the rhubarb and strawberries. I am going to make this again VERY soon!

Chocolate Cavity Maker Cake

Wonderful! I just used regular chocolate cake mix, used part mini-chips and part regular (and dropped the total down to about 1-1/2 cups), and subbed strong coffee for the coffee liqueur, and it was just lovely. I decided to serve it with some homemade whipped cream mixed with mashed raspberries -- I didn't add any sugar so it was a bit tart, and this paired really nicely with the very sweet, rich cake and lightened and freshened it up a bit. It was a big hit and very pretty with the pink cream served on top!

Smothered Beef Short Ribs

Very good flavor, though I guess I didn't expect the vegetables to have completely disintegrated by the time it was done cooking, so the ribs didn't seem so much "smothered" as they were just in a whole lot of gravy. I cut down on the liquid even because it seemed like so much, cooked it an extra hour, and added a small bit of cornstarch with cold water, and it was a nice, thick gravy after the 3 hrs or so I cooked it down. Not sure about the reviewer who said this was way too much prep work for the result -- really didn't seem like any more work than your average home cooked comfort meal! Cooking from scratch takes love and time. :)

Hot Chocolate

I LOVE this recipe but dropped a star because I think it would be really weird if left as-is. I mean, 1/2 tsp of ground cinnamon?? I just used a sprinkle and it was already a little too much! (And I love cinnamon too, so that's saying a lot! Don't you want to be able to taste the chocolate here??) Also, add a splash of vanilla and a pinch of salt! I used unsweetened chocolate and extra sugar to make up the difference, simply because that's what I had handy, but I'm sure the semisweet is great too. Using the egg is brilliant! So creamy and rich! But I can't for the life of me figure out why people are complaining about lumps unless they just don't know how to cook with egg as a thickener. Beat it well before adding and whisk it in GRADUALLY! I made this both on the stove top and in the microwave and like the stove top much better, but the microwave method is good in a pinch. With the adjustments, this is a perfect homemade cocoa!

World's Best Lasagna

How did it take me this long to discover the wonder that is combining ground beef and sausage in my pasta sauce?? Now I don't think I can ever go back. (I used mild bulk sausage, and it was perfect!)

Bread Pudding II

Made this with leftover banana muffins that were too heavy and unsweet to be enticing (tried too hard to make them healthy for my 1-year-old). I hadn't used any sugar aside from the bananas when I made them, so the sweetness of the pudding made them lovely. I used brown sugar and cut it down to 1/2 cup which was just right, and used 8 egg whites (only because I had them leftover after using all the yolks in another recipe). Added extra butter to make up for the fat lost from the yolks, because, hey, why not enjoy your food? ;) It's a great recipe and I'm sure is just as yummy with regular bread, but the banana bread was a fun change!

Quick, easy, and tasty! I used half butter and half olive oil, and added another dash of salt after the potatoes were coated, since it had been drained away with the water and they needed a little boost.

Apple Crisp II

Awesome!! Followed reviewer's advice and cut in cold butter instead of melting it for the crust, which was lovely -- definitely gives it the texture you're looking for in a crisp. I also doubled the crust, putting apple layer in between, which is yummy but also very very rich, so it's probably not for everyone. It's a little much for me, and I love rich stuff! The only change I think is important to the recipe is the cold butter, but I'm sure it's delicious no matter what. :)

Mild Cheesy Chicken Enchiladas

Yum! I'm always looking for a good, saucy, gooey enchilada recipe, and this is a great one. :) Some reviewers mentioned adding enchilada sauce under the cheese sauce, and since I didn't have any but that sounded like a good idea, I used some jarred salsa and that worked great. Also, instead of all that melted cheese on top (sounded a little too intense!), I made a cream sauce first and melted about half the called-for cheese in that, plus about double or so the called-for sour cream, and it was lovely. Very creamy, just what I was going for! Oh, and I sauteed the onions first, a definite must.

Sweet, Sticky and Spicy Chicken

Awesome! The only reason I dropped a star was because of the necessity of changing the recipe in order to allow the sauce to thicken. I followed top reviewers' advice of dredging the chicken in flour, browning it first at a pretty high heat, then removing the chicken and cooking the sauce in the same pan, deglazing it and getting all that yummy brown chicken flour off the bottom. It thickened right up and tasted incredible! I also added 1/2 to 1 cup veggie water (from cooking veggies to have on the side), to stretch the sauce out a bit without just doubling ingredients and thus making it too intense. It was a great idea and I would definitely do this again -- we like sauce. :) Also, I don't have hot sauce and we aren't huge on real spicy stuff, but I added a few shakes of red pepper flakes and it gave it just enough of a kick without burning our mouths. Even my picky husband loved it, and my 14-month-old too! :)

Maple-Balsamic Vinaigrette

Delicious! Didn't need to change a thing (I didn't use any salt & pepper, didn't feel it needed it, but it would have been fine with a little added if someone wanted it). Used it on a salad of mixed greens with red peppers, green onion, craisins, walnuts, and chicken. With a side of Italian bread, it was a perfect dinner!

Easy OREO Truffles

I don't know if I'd call these easy, but they are delicious! I used a fork and a spoon for dipping and had a friend sprinkling on the extra cookie crumbs after I pulled them out of the chocolate so they didn't harden before I got to that step. Also tried the Nutter Butters but the Oreo ones were much better!
