Easy Sugar Cookies

This was an easy recipe to prepare. I rolled it so that the kids could cut out cookies, and it worked pretty well. I halved the recipe (lightly beat 1 egg then use 1 1/2 tbsp of it, to get half an egg), but still used 1 tsp vanilla, which was perfect. Both kids got to cut out 8 medium to large cookies. Then we decorated them with sprinkles, baked and enjoyed. Usually making sugar cookies is an ordeal - more dough than they have attention span for, and frosting which makes it all more complicated. This way kept it simple and the recipe was still sweet enough without frosting for the kids to enjoy. When the portion that I'd put in the refrigerator for an hour or so came out rock hard I microwaved it on a very low power level for less than 30 seconds and it went back to its original consistency. I realized after the first batch that since the cookies are thinner rolled I needed to shorten the baking time to somewhere between 6-7 minutes. The remaining scraps of dough I mushed together into tbsp-sized drops and made 1/2 tsp-sized divots which I filled with jam - also very tasty!

Whole Wheat Muffins

After reading other reviews, I decided to skip straight to some alterations that sounded good. I did the 1 1/2 cups whole wheat flour + 1/2 cup oats (no all-purpose flour), 1/4 cup white sugar+ 1/4 cup brown sugar, 1 tsp cinnamon, 1/2 teaspoon nutmeg, 1/3 applesauce (no veg. oil), and I used instant non-fat dry milk (3 tbsp. milk powder plus 3/4 cup water = 3/4 milk) as I do for all of my baking when milk is required (saves having to keep as much fresh milk on hand). The baking powder, salt, and egg were as directed. I made sure not to over stir the batter and kept a close eye on the muffins in the oven which ended up coming out around 17 mins (my oven runs hot). They turned out great! Attractively craggy and rounded, rather dense as I expected with the applesauce substitution, and very tasty. They were gently sweet, and with the added spices smelled so good while baking. I will be making them again! I enjoyed them with the "Delicious Vegan Hot Chocolate" recipe from this site. That was a much sweeter and richer treat, which balanced these milder muffins. I also look forward to trying other variations on this versatile recipe.

Delicious Vegan Hot Chocolate

I'd never had soy hot chocolate before and wasn't sure what to expect, but this didn't taste "soy" it just tasted like good hot chocolate. I cut the soy milk, cocoa, and sugar amounts in half, since I just wanted one serving. After reading other reviews I sprinkled in only a little bit of salt. I forgot to halve the vanilla, and never noticed till after I'd finished drinking it. It was rich and chocolate-y. Another time I will try melting some chocolate in instead of using cocoa powder, as other reviewers have done.

Lemon Whippersnappers

Very simple to make, and of course, very sticky! The flavor is a light lemon, not super sweet. The cookies were light weight and soft and chewy. I made them with just the directed amount of whipped topping, but another time I might try the suggestion of another reviewer of putting the last half cup or so of topping from the container in, just to use it up and see how it goes.
