Whole Chicken In a Pan

I don't really know how to butterfly a chicken but it still came out great. I didn't have tinfoil or a brick so I sprayed the bottom of a skillet with non-stick spray, put it on top of my chicken and stacked cans of beans on it lol. It worked great.

Easy Homemade Chili

Good base. I added fresh garlic, black beans and chili beans and tomatoes with chilis. Put in crockpot all day on low. Awesome!

Mini Pineapple Upside-Down Cakes

Can I give this a ten? I followed the recipe exactly except I used crushed pineapple cause that is what I had and whole cherries cause I like them. I have made this twice and they are gone in like 2 days. Awesome!

Whipped Cream Cream Cheese Frosting

Absolutely the best cream cheese frosting I have ever had/made. I would give it 10 stars if I could. I did put the bowl, beaters and whipping cream in the freezer for a few minutes before I whipped it. I whipped the cream first then the cream cheese mixture. I put it on carrot pineapple cake l (from this site) and everyone loved it.

Hamburger Rice Soup

This was pretty good. I did make a couple of changes. I omitted the salt, onion soup mix is salty enough for me and I used stewed tomatoes because that was what I had. I also used 6 cups of water and 3/4 cup of white rice. Nice change from the usual hamburger recipes.

Pronto Beef and Rice

Very good. I gave it a four cause my husband thought it needed something. I thought it was very good but would be awesome in a stuffed pepper or cabbage roll. Thanks for a quick tasty supper.

Chicken Stir-Fry

We love this stir-fry. I did use flour instead of corn starch and I added snow peas and shredded the carrots and used fresh garlic and ginger. (I keep the ginger in the freezer and it stays fresh forever...thank you Rachael Ray). Also I did not let my chicken marinade, but it was still awesome. My 2 year old had two helpings.

Mexican Lasagna II
