Suki's Spinach and Feta Pasta
Great recipe!! I change things (of course) according to what I like and have on hand. This time I used vegetable pasta, a lot more garlic (3 cloves), onion (1 C), tomato, mushrooms and spinach (about doubled each). I also added some hot Italian sausage (browned in the garlic and onion) and Italian seasoning/garlic salt at the end. Great recipe!!

Morning Glory Muffins I
I have made these muffins many times now! I alternate between making these and the banana crumb (minus the crumb now) pretty much every week. Unfortunately, I have always tweaked the original recipe to my liking. I use 1C wheat flour and 1C all purpose. I use about 1C agave instead of sugar, add 1 teaspoon nutmeg, use 1C applesauce instead of butter, and add wheat germ, flax seed, and walnuts in the batter. They are great breakfast muffins!

Italian Spaghetti Sauce with Meatballs
Wonderful recipe! I did change a lot, per reviewer’s recommendations and necessity. For the sauce- Used 1 (28 oz) can of crushed tomatoes with Italian style seasoning, 1 (28 oz) can of tomato puree, added ¼ bunch parsley sprigs and scooped them out, added italian seasoning, left out the bay leaf, and added a bit of red wine. For the meatballs- added Italian seasoning, used Unikass Robusto cheese from Whole Foods (all I had at hand) instead of parm (and I doubled the amount), and used ritz crackers instead of the bread crumbs. I also used hot sausage and ground beef. Lots of changes, but delicious!
