Whole Wheat Honey Bread

Excellent! This is my new whole wheat recipe! I was looking for this exactly. I changed a few things: used 1 C water and 1/8 C milk (as other reviewers had suggested), used 2 C whole wheat flour and 1 C whole wheat pastry flour, used low-fat margarine in place of the shortening and also added 1 T of vital wheat gluten. This bread is so excellent--even plain.

Fantastic Black Bean Chili

Wonderful chili! The red wine vinegar gives it a nice twist. My changes: only 1 can of black beans, 2 15.5-oz cans tomatoes, 1 14.5-oz can stewed tomatoes & some diced celery. Perfect.

Chicken and Artichokes

This is a family favorite. I modify the recipe slightly by adding a clove of garlic and omitting the butter. I prefer to saute the chicken for a few minutes first, then place all ingredients in a crock pot; the chicken gets very tender this way. I serve it over spaghetti noodles with parmesan. Very good.

Easy Mini Quiche

Great brunch idea--and very easy to customize to individual tastes/dietary needs. In some, I followed the recipe exactly but also added chopped deli ham; in others, to make them a bit lighter, I used chopped deli turkey, Egg Beaters, and fat-free cheese. They all turned out great--even the lighter ones were a hit. (Note: Make sure you spray the pan liberally or clean up is a little challenging.)

Easy Cheesy Cream of Broccoli Soup

GREAT, fast soup! I steamed fresh brocoli with some diced onions. I also used cream of chicken soup and about four slices of fat-free cheddar cheese. This is quick AND delicious!

Greek Penne and Chicken

Wonderful recipe! I was looking for a great lemon-artichoke-chicken recipe. I changed a few things to make it even healthier: 1. I omitted the butter and used olive oil spray instead and 2. I used non-fat feta. The lemon makes the dish, so don't leave it out. I also used 1 T dry parsley instead of fresh. It's a keeper.

Mediterranean Pasta

This is one of my husband's (and my!) FAVORITE pasta dishes. We call it "Valentine's Day Pasta," since we made it for Valentine's Day. To make it lighter, I always use turkey bacon and fat-free feta (and non-marinated artichoke hearts). It is wonderful. Thanks Sara!
