Coconut Cream Cake I

This cake is AWESOME!! I made it for Easter and every one just LOVED it. I did have a problem with the milk mixture running under the cake but it was still good; next time I will poke larger holes so it can absorb into the cake instead of running under. I decorated it with green dyed coconut and scattered jelly bean "eggs" over top.

Nana's Barbeque Sauce

I have been making this yummy barbeque sauce for some time but just realized I've never rated it. This is the BEST sauce ever. The first several times I made it, I followed the recipe exactly. I now use different sweeteners like honey, molasas , I've even used Splenda. I've used dried onion flakes, liquid smoke, different vinegars and every time I get a great tasting sauce. I highly recommend this barbeque sauce.

Chef John's Swedish Meatballs

I must say that I have made several recipes from Chef John and they never disappoint. That includes this one. I had never made Swedish Meatballs before but had eaten them at a party; I will make them again since my family loved this recipe. I did change it somewhat, I had no ground pork and so I used all ground beef but other than that I followed the recipe exactly. Fixed mashed potatoes and English peas and everyone enjoyed the meal immensely. I thank you very much Chef John for sharing your recipes with us.

Fruity Sweet and Sour Sauce

I needed a sweet and sour sauce for egg rolls and this was very good and easy to fix. My son's brother-in-law ate with us and he liked it and he doesn't even LIKE s/s sauce.

Quick Yeast Rolls

Absolutely delicious and easy. The recipe stated it would make 8 but I got 16! I used about 2 tablespoons of dough in my muffin tin and as I said I got 16 rolls. Very good ones too.

Yummy Sweet Potato Casserole

This recipe is similar to one my family uses. We use canned sweet potatoes, drained and mashed, leave out the milk and follow the remainder of the recipe. Even my son eats these and he hates sweet potatoes. This year, I baked them in a 8"x 8" baking dish which made the layers a bit thicker and had only a few left after Thanksgiving.

Dishpan Cookies II

O M G These are AWESOME!! I halved the recipe and got 18 more cookies than the expected 3 doz. I did use real butter instead of margarine as I never buy that product. I did make another slight change in that I used 1/2 cup white chocolate chips, 1/2 cup butterscotch chips and 1/2 cup semi-sweet chocolate chips. I will be making these again and again.

Perfect Pumpkin Pie

I loved this pie! So did my granddaughter, who ate almost half the pie, and she's just six!! I used 2 1/2 teaspoons pumpkin pie spice to spice it up a little more for my daughter-in-law. It was so good, I will make it again for Christmas.

Broccoli Casserole III

Great casserole. I used a package of broccoli and a package of cauliflower, increased the recipe to 10 servings and my family loved it for Thanksgiving. I will use again for regular meals.

Turkey Brine

I have never brined a turkey before so was not sure what to expect. It made my turkey so moist!! I will never fix turkey any other way. The only thing I did not really care for was the strong rosemary flavor so will use less next time.

Giblet Gravy I

I used this recipe for Thanksgiving. It has a wonderful flavor but it was not quite thick enough. I will make again but use more thickening. Maybe use the butter/flour roux method for more body to the gravy.

Spaghetti Pie II

I really liked this dish. I gave it 5 stars even though I had to change it. I got it started and discovered I'd used all my diced tomatoes; all I had was a 15 oz can of tomato sauce. I followed directions otherwise and it was good. My picky eater did not care for it but every one else did. My son even ate seconds. I want to try this again with correct ingredients. But my improvised edition was very good.

World's Best Potato Soup

This is absolutely the worlds best potato soup. I was not sure if my family would eat it as some of them are very picky eaters. My grand daughter ate two bowls of it and as I was putting it away after eating she asked for more! I have enough left for another meal. I definitely will be making it again. I did add 2 cloves of garlic and sauted the onions and celery in butter and did not have half and half so I used 1 cup of whipping cream and 1 cup of milk instead. Very good.

Blueberry Cream Muffins

I fixed this recipe this morning for breakfast. All I can say is YUM! I did make a slight change, I made it in a Bundt pan for a coffee cake. Every one ate at least 2 slices even the five year old picky eater. I will be making it again. Thanks so much for this recipe. ( I did substitute 1 cup of Splenda for a cup of sugar.)

Hearty Ham Casserole

Outrageous Chocolate Chip Cookies

YUM YUM YUM!! These were SO good; they lasted only one night. I loved that I could bake them crunchy for me and softer for the grandchildren. I will be making them again soon.

Crisp Marinated Cucumbers

I am 65 years old and I've eaten these most of my life. My paternal and maternal families always fixed these for get-to-gathers; the only difference was they added black pepper and left out celery seeds. We even use the vinegar/sugar mix for "pickled" beets. Yum!
