Rhubarb Crumble Pie

This turned out quite good...I had to add extra butter to the crust mix to get it to the point where I could pat it into the pan. Also added a touch of vegetable oil for the same reason.

Butterscotch Potato Chip Cookies

I didn't have enough potato chips so used 1 cup potato chips and 1 cup taco chips. Worked great. Good recipe and great way to finish off those bags of chips no one wants to finish.

Peanut Squares

These bring back great childhood memories however the two times I have made them, they have been such a mess to frost and roll in the peanuts that I swear I'll never make them again! The cake crumbles, the frosting drips all over, and the peanuts don't stick well unless I smush them on. I have to rinse off my hands in between each square. I tried putting the unfrosted squares into the freezer for a bit before frosting and rolling and that helped a bit. I'm wondering if there are other tips that make these easier to work with? I'd love some ideas because they really are a great treat.

Sugar Peanuts

These are easy and great. The first time I tried them, I thought I had done something wrong because it took so long for the sugar to thicken up around the peanuts. It takes 6 - 7 minutes. So be patient! Then, my oven tends to run hot so I burned them but they still tasted pretty good. The second time I made them, I baked them at 300 for 25 minutes and they came out perfect.
