Easy Sugar Cookies

Very very easy (and good) recipe. My boyfriend and I were sitting here craving cookies or sweets- but we have nothing in the house. I had been browsing this site all day and thought to myself "I can just make these cookies." I had all the ingredients, and literally got off my couch at 8pm and I'm sitting back down on the couch at 8:50 after baking 2 sheets of cookies. I added jam to the middle of half the batch for an added touch. Very easy and yummy!

Absolutely Awesome BBQ Sauce

I don't feel right giving this any less than 5 stars. Although I don't really feel it is a 5 star sauce, I modified it a lot... so if it's less than perfect- it's probably my fault. I didn't have rum or bourbon on hand so I just left that out (which may be a big reason why it's not quite wonderful to me). I love onions so I added about 1/2 a cup of onions. This ended up being very sweet AND very spicy. I should have paid attention to the reviews and added less brown sugar. I added a bit more ketchup to try to minimize the sweetness.I made this today so it could sit a day in the fridge and then I plan to use it with chicken in my slow cooker to make pulled bbq chicken sandwiches. I'll come back and let everyone know how they turn out :)

Colleen's Slow Cooker Jambalaya

I'm rating this for my boyfriend.I made it for him because they don't really have much like it in Australia where we live (I'm from the US so I'm more familiar with this). I actually didn't eat this because I don't eat shrimp or sausage- but he really liked it. We substitued chorizo because it is easier to find in Australia. My boyfriend really liked this- but he was comparing it to the 2 he tried in California at nice restaurants, so he said it wasn't his favorite. He definitely wants me to make it again though!

Pumpkin Cream Cheese Muffins

We LOVED these. I did modify them a bit though. I used splenda instead of sugar, margarine instead of butter and nearly fat free cream cheese instead of regular. You would think they would be bland and tasteless with these modifications- but they were still great (and much healthier). I also used fresh pumpkin and steamed and mashed it (they don't sell canned where I live in Australia). I used about 2 cups of pumpkin and I think that is why they came out a lot more dense and gooey rather than fluffy like a muffin. People actually said that the dense gooey texture is what they really liked- so I think when I make these again, I'll stick to the extra pumpkin! I also made them in a mini muffin pan so they were perfect little sized muffins to eat with a cup of tea.

Dilly Potato Salad

I'd give this recipe 5 stars but I had to add a lot of seasoning to make it a little better. I used about 2 1/2 tablespoons of dill - I LOVE dill and also doubled the garlic powder and green onions. I also used whole grain mustard because I like it better than dijon. Lastly, I added a bit of salt and pepper. I HATE yogurt... but I know that I don't mind yogurt as much when it's mixed with other things and I can't taste the sourness so I thought I'd give this a try. But, that's why I added so much more spice (to kill the yogurt flavor). I also like tzatziki which this kind of reminds me of. If this wasn't low fat, I'd say it was good. But considering I won't be gaining too much weight after I eat ALL of this- I'd say it's great! For all you out there who don't like yogurt--- trust me, I really can't stand yogurt - just add more seasoning and it will turn out very tasty!

Simple White Cake

THis came out PERFECTLY. I added more milk (3/4 cup) per other reviewers' suggestions and I also added some lemon extract and lemon zest to taste. It was the first thing I made in my new kitchenaid mixer and I was very impressed with the results. I made little flower cupcakes in my flower pan and dipped each one in glaze (http://allrecipes.com/Recipe/Vanilla-Glaze/Detail.aspx) - I added lemon extract to the glaze as well. These stayed moist and delish for days!
