About this Cook
I'm the mother of two spirited little girls and I've been married to my long-time best friend, Matt, since 1995. Although we enjoy traveling to new places each year, my favorite times are just spent in the coziness of our home watching my girls play together and listening to Matt play his cello and classical guitar (www.triolumina.com). One of my favorite times of day is late afternoon. I crank up my fusion jazz music, pour a glass of Syrah and create something (hopefully) wonderful for my family to eat for dinner. I love the simple pleasures of life, such as quiet time to curl up and read and gaze out my windows at the beautiful islands dotting the Salish Sea. I love where I live, and am thankful to God for our health, happiness and loving family. We are blessed!

Anything organic! But mostly comfort food.

Ken's Kickin' Posole
This is one of my favorite Mexican stews. All the ingredients come together with full flavor. I also roasted the jalapenos (about 6), used about half the amount of chicken broth and garnished with sour cream and fresh avocado. Delicious!

Mom's Island Treasures
This is one of my favorite cookie recipes. It's excellent as is, but I love tweaking my recipes, so with this one I substitute about a 1/3 of the white flour for whole wheat and I add a tablespoon of golden flax seeds to make a cookie with an incredible texture.

Quinoa and Black Beans
Excellent! I discovered quinoa only about 2 years ago, and I love it. It's not only simple to cook, but it's also incredibly good for you. The light fluffy texture of this powerhouse of a grain is wonderful, but it does need some sprucing up in flavor, and this recipe does that perfectly.
