Roasted Chicken Noodle Soup

I loved this soup! I made it low sodium (low sodium chicken stock, and very little salt) for my dad who's on a restricted diet, and that came out a little bland, but a little salt and pepper to the individual bowls of soup, and it was perfect! The only thing I did differently was using heavy cream instead of condensed milk. I didn't have any condensed milk, but had some leftover cream from another recipe. I also left out the potatoes because my dad's allergic, but I don't think the soup was missing them at all. In fact I think it could have become a bit to heavy with them. Perfect as it was though! Great Comfort food!

Chicken Pot Pie IX

This recipe was fantastic! The perfect cold weather comfort food. The only thing I did differently from the recipe was use already cooked chicken. I had baked some chicken to use in some other recipes, and just shredded up and boiled with the veggies as stated (I also used another reviewers suggestion and boiled the veggies and chicken in chicken stock instead of water). Everyone that tried this recipe loved it! My dad said it was the best chicken pot pie he's ever tasted -- and that's really saying something because he LOVES chicken pot pie!

Slow Cooker Chicken and Dumplings

I thought this was great with just a few minor changes. I added veggies (fresh carrots, green beans, celery, and frozen corn) to make it an easy one-dish meal, and added chicken stock instead of water. I used the dumpling recipe on the baking mix box (double batch) instead of refrigerator biscuits, just because that's what I had on hand. I also shredded the chicken around the same time that I added the dumplings (about 45 min. to 1 hour before serving). This was a delicious and unbelievably easy meal -- just dump it all in and leave it. Great comfort food on a cold day!

Zucchini Patties

I make these all the time and as some other reviewers suggested, I use baking mix instead of flour. It adds a little saltiness and richness to the flavor and makes them even better. I also fry them in butter instead of oil -- it makes them a little less healthy, but just that much tastier;) Another tip is to make sure you beat the egg nice and fluffy before adding to the other ingredients. This makes the patties themselves lighter and fluffier. This is my go-to quick recipe (provided I have the ingredients on hand), my husband and I love them!

Chocolate Balls

I haven't tried this particular recipe, but I make something similar every year. After reading a lot of the reviews I figured I would add a little tip: Instead of shortening, I use 1 stick of household parafin wax mixed with 1 bag of chocolate chips in a double boiler for the coating. The wax helps the chocolate set quicker and harder and makes for a nice sheen. It also thins the chocolate to make it easier to dip the balls. Also, if your peanut butter is too thin or melty, just keep adding more confectioners sugar until the dough is stiff enough to work with. We make peanut butter balls similar to these every year (never tried it with the graham cracker though, may have to try that this year!)and we love them! It's a must have every year!!
