I'm (still) a graduate student, and cooking is a huge stress reliever for me.
My favorite things to cook
Anything from scratch! I love baking pie, making lasagna, developing new pasta salads, trying out new relishes for grilled chicken and pork, and modifying recipes each time I try them.
My cooking triumphs
I once made Beef Wellington - completely from scratch - for my husband's birthday. (But I'll probably never do it again!)

English Honey-Roasted Turkey
This year I left out the lemon, and instead used half an orange to lightly rub the skin before applying the glaze. Whether using an orange or a lemon, be sure to go LIGHT on the rubbing! The flavor should be more about the butter and honey than about the citrus! Once again this turkey got rave reviews from my guests; even one of the pickiest eaters I've ever met loved this turkey and the gravy it made. Happy Roasting!

Deluxe Blackberry Pie
The BEST blackberry pie in the world! I love this pie! My husband loves this pie! This pie gets rave reviews every time I make it for other people! I use 1/2 tsp. cinnamon and 1/3 tsp. allspice (I prefer allspice to nutmeg), and 3 tblsp. of the blackberry brandy, just because I really really really like the way the brandy tastes with the berries. I also sprinkle a teaspoons or two of quick-cooking tapioca over the fresh berries before adding the puree, because blackberry pie is very finicky about setting up. Thanks for the fantastic recipe!

Baked Coconut Chicken
This was fast, easy, and tasty. Be sure to just barely coat the bottom of the baking dish with the coconut milk, otherwise it will make the bread crumbs very soggy. I substituted light coconut milk, to cut down on the fat, without impairing the flavor.
