Split Pea Soup without Pork

As simple as this recipe was, it was delicious! My family felt like it was at least equal to Pea Soup Andersons' (the actual restaurant). I think I might have used more broth than water. But the trick is to blend the whole thing once it's done cooking. That makes it so creamy and yummy.

Pumpkin Chocolate Dessert Cake

This was AWESOME! I made it for Thanksgiving this year and everyone LOVED it. Got many comments on the good texture and moistness. The flavor was wonderful - I would have never thought to mix pumpkin and chocolate. I will probably make this recipe for many Thanksgivings to come!

Ultimate Cornbread Stuffing

Pretty good! I made this for Thanksgiving this year, and several family members commented that they really liked it. I felt like it was a bit too wet and didn't clump together as much as I would like, but I don't know how to solve that problem. The flavor was really good, though!

Cranberry Dip

I took this to a Christmas party last night with pretzels to dip it in, and got some rave reviews. However, I had made some changes to the recipe (due to time and lack of ingredients), and thought I would probably change some things in the future. I used dried cranberries, not fresh. I candied the cranberries and sugar in a pot on the stove, rather than in the oven. I added the jam to the pot, and then once that was mixed together, I added the cream cheese (the recipe didn't state when to add the cream cheese). It really changed the consistency and flavor of the cream cheese big time, and I ended up adding another 4 oz of it to give it a bit more of that flavor. I think in the future, I would still do the cranberries the same (but use probably 1/4 cup sugar), but let the mixture cool before adding the cream cheese.

Cinnamon Belgian Waffles

GREAT waffles! I used my round Belgian Waffle maker and was able to squeeze out 4 waffles, but 3 of them were not full waffles. :) I didn't separate the egg yolk s and whites, and they were still delicious...but they would have been even better if I had whisked up the egg whites separately. I'll do that next time!

Double Layer Pumpkin Pie

Very good, but not amazing. I used one whole pumpkin, cut and steamed in the microwave in portions and pushed it through a sieve to get all the stringy pieces out. That part worked out really well. But I felt like the cream cheese layer was not solid enough to hold the weight of the pumpkin layer. Perhaps because I didn't use the canned pumpkin? Anyway, it still got great reviews for Thanksgiving.

Eggnog Pancakes

These may have been the best pancakes I've ever eaten! They were very fluffy, and light, but not too light. The texture was fabulous. The taste was wonderful! I doubled the recipe and had more than enough for my family of 5 (3 of which are little boys) with plenty leftover for breakfast in the morning! I used 2 cups Southern Comfort non-alcoholic eggnog and 1 cup whole milk. It turned SO yummy. I'll be making this again!
