Maple Glazed Pork Loin

I made this tonight and used the tip above on using soy sauce and it turned out great. It tastes like a real good ham more than a pork loin. We really enjoyed it.

Corrigan's Minestrone

This is a really great recipe. I just tried it for the first time b/c its cold and rainy outside and it just sounded good. I didn't have all the exact ingredients so I used what I had on hand. I used pinto beans instead of kidney, chicken broth instead of veg., italian seasoning instead of basil and oregano, and frozen garlic and parmesan potatoes. We enjoyed a big bowl full accompanied by some fresh cornbread and it hit the spot!

Miss Betty's Super Quick Dinner Rolls

I rated this 4 stars because they are super quick, and they are good. However, they should be called super quick dinner biscuits. When I think of a dinner roll, I think of bread, not biscuits.

these were really good and really easy. i thought they needed a little more seasoning, but not enough to make a big difference. I made these for a Wed. night church supper and they were a big hit.

I made this recipe exactly as above, except I didn't use Dave's Steaksauce. Instead I made my own with 2 Tbsp Worcestershire, 2 Tbsp Vinegar, 2 Tbsp Brown Sugar and 4 Tbsp ketchup. The whiskey we used was some cheap stuff we've had for years but never opened until now! I think it was Old Crow? Anyway, great recipe and I'll make it again.

Venison Scaloppini

This was delicious! I used milk instead of cream, eliminated the parsley (didn't have it) and some round steak my husband had cut up when processing the deer. I also used Panko (Japanese Bread Crumbs) instead of regular bread crumbs. I also added garlic powder and onion powder when I seasoned the meat before cooking. Also, didn't have sherry or marsala, so I used some white wine I had on hand. I will definitely make this again!

Chile Rellenos

A good start, but I changed up a few things. I used RedRobyn's suggestion on the eggs - love that! I only used flour, eggs and panko for my breading. First dipped in flour. Then in the eggs. Then in the panko (japanese bread crumbs). They came out really crispy and delicious! Will totally have these again.

Beef Tenderloin in Creamy Porcini Sauce

This was very good! I used venison tenderloin and portabella mushrooms. I cooked the onions and mushrooms AFTER I cooked the meat to utilize the pan drippings and therefore omit the bullion cube. My sauce didn't thicken as many others mentioned, so next time I will cook it a bit longer and ensure it thickens before I roast it all in the oven.

No Roll Pie Crust II

This is by far the easiest pie crust I've made - and it tastes great! I did change the recipe to better suit my preference, though. The recipe, as is, is a good one - if you like a REALLY flaky crust. I, however, like my crust a little less flaky. Flaky enough to crumb a little when you cut it, but not so flaky it leaves so many crumbs behind. The two things I changed were the oil & milk. I used 1/3 C oil and 3 Tbsp milk. This gives it a more dense, yet still flaky crust.

Herb Roasted Pork

Oh my! I LOVE this glaze on this pork. I didn't get mine glazed the last 30 minutes of cooking, so I glazed it as soon as it came out of the oven and made sure I had enough to have some as a dipping sauce and I'm glad I did. It is delicious!

Ground Beef Curly Noodle

VERY good. I used 2 packets of beef flavored noodles, 1 packet of seasoning, homemade rotel tomatoes and since I didn't have corn I used green beans. I also added several dashes of soy sauce. Someone else mentioned how it isn't an appealing looking dish, and I imagine that it isn't with the corn, but the with green contrast of the beans it was. Tasted good too. Only 4 stars b/c I wouldn't say it was "the Best" but it is definitely yummy and something we'll have again. Next time I think I'll add baby corn, bamboo shoots and water chestnuts.

These were easy and delicious. I don't have a custard cup pan so I used a mini muffin pan and cut the time way down. About 6 minutes at 450º and 6 more minutes at 350º. I also used the idea of adding some vanilla to the batter, and adding a touch of butter in the pan and heating the pan prior to adding the batter before baking.

Smothered Hamburger Steak

The patties were great! The "gravy" was terrible! I should've known better than to make mushroom soup for gravy. Homemade brown gravy would've been MUCH better. I salvaged my gravy by adding Kitchen Bouquet browning & seasoning sauce. I'll make these patties again, but not with canned soup.
