Japanese Nabeyaki Udon Soup

This was delicious! Very flexible recipe. I used veggie stock and added some bonito flakes to it. I had no other veggies but kale, and the soup was quite yummy with just noodles and kale.

Sweet Potato Enchiladas

These were amazing. I used green enchilada sauce as others suggested and omitted the onions as I just wasn't feeling them. I couldn't stop eating the filling as I was making them. They tasted even better the next day.

Grilled Fish Tacos with Chipotle-Lime Dressing

The marinade was great! I used shrimp with good results. I did not attempt to make the dressing as-is, but instead mixed up some mayo + lime juice + chipotle powder, which was delicious. Added some cabbage and pico de gallo to each taco and it was a perfect meal.

Fresh Beet Salad

Bummer! This recipe evidently doesn't work well with vegetarian "bacon," which is what I used. Maybe you really do need the bacon fat to add flavor. Veggie bacon doesn't leave grease behind, and I found the dish to be pretty bland.

Fall Salad with Cranberry Vinaigrette

This one didn't quite hit the mark for me. The dressing is quite sweet, and I found that the combo of that with the pears was just too much. I used rice vinegar as others suggested. Dressing was good, but next time I'll omit the pears and add more savory ingredients.

Thousand Island Dressing II

OMG, I had no idea Thousand Island dressing could be this simple! This is so easy to make and while maybe it doesn't rival a $5 bottle from the store, it's so much better than the cheap $1.50 bottles.

Spicy Sweet Potato Soup

I have been addicted to this soup ever since I first made it a few months ago. The sweetness of the sweet potatoes and the peanut butter balanced with the lime is soooo good. I use parts of this recipe and parts of a similar one that adds black beans and doesn't blend the soup, which I prefer. I also use chunky peanut butter. If you like this recipe, also check out some of the other variations on it--there's another recipe from All Recipes that I make which uses diced tomatoes, bell pepper, rice, and peanut butter. Yum!

Tarte aux Moutarde (French Tomato and Mustard Pie)

This is super delicious. I've made tomato tarts from similar recipes before, but the thing that this recipe taught me was to put a layer of cheese on the bottom of the crust--that really improves it.

Mexican Bean Salad

This is very good. I make a simplified version of it every week (using just sugar and apple cider for the dressing). I like to saute the corn in olive oil with the garlic and chili powder before I add it to the beans. It's also quite good with some diced tomatoes added in. If you use dried beans the dish becomes much cheaper to make!

I guess this is a recipe where the meat is essential. I made it without the sausage and didn't care too much for it. I had to add a lot of spices to combat the blandness.

Stuffed Jalapenos with Smoked Gouda and Pineapple

These were great, although I will be making some changes the next time I make them. I was surprised at how crunchy the jalapenos were--not necessarily a bad thing, but I think next time I will cook them for longer or precook the jalapenos. The filling seemed a little thick and I couldn't taste the pineapple as much as I was hoping to, so next time I will add more than 1/2 a cup. We used small jalapenos and ended up making a T-cut along the side (where the top of the T is at the base of the stem) because we didn't think we could get all the seeds out just by slicing off the top. I think it worked well--we could hold the jalapenos by the stem to eat them.

Roasted Butternut Squash and Garlic Lasagna

I liked that this was a unique way to use butternut squash, but to me all of the flavors were very heavy (squash, cheese, milk)--it felt like there needed to be something tangy or different to balance it out. I used some motzarella cheese along with the parmesean, which I think helped, plus some basil.

Scalloped Tomatoes

This recipe is delicious. The brown sugar plus the tartness and acidity of the tomatoes are wonderful. Tip: Don't cover this dish when you bake it--the bread will be firmer and not so mushy if you leave the dish uncovered. I also add shredded motzarella cheese on top during the last 10 mins of baking. So good!!

Mom's Brussels Sprouts

After a disastrous attempt at adding brussels sprouts to a pasta dish, I didn't think I'd ever be able to eat them again, but this recipe was delicious. I mixed the brown sugar in water because some people reported having problems with mixing the sugar in the butter. I also subsituted raisins and goat cheese for the walnuts and they were very good.

Sweet-and-Sour Beets

I really wanted this recipe to work, but I ended up with a gooey dish of beets with a bunch of sweet and sour beet-colored jello. I think maybe I had too much sauce for too few beets. Bummer.

Grilled Radishes

This one gets 5 stars because I HATE radishes, but now I can eat them--and like them--thanks to this recipe. Like many other reviewers, I skipped the foil and cooked them in a pan with butter and garlic. The radishes are still crunchy, but all the bite and bitterness is gone. :)
