Quick and Easy Pizza Crust

Baked Eggplant Parmesan

The eggplant was so tough my girlfriend couldn't eat it. You gotta fry the eggplant before you bake it. Maybe this recipe is okay if you're trying to cut calories by not frying it first, but the taste ain't there.

Garden Pasta Salad

Excellent recipe. I use a small can of diced olives to sub for the carrots, and I use one 16-oz bottle of whatever olive oil-based salad dressing I have around. Two bottles would be WAY too much. Sometimes I throw in some spinach or I use gnocchi instead of spiral pasta. You can sub in pretty much whatever you like. The people I work with request it for our solstice and equinox parties every year!

Whole Grain Waffles

I don't know if Wheat Bran is the same thing as Wheat Germ, but all I could find at Kroger in Durham NC was Wheat Bran. I made this recipe with that substitution and it came out great. My wife is hypoglycemic but she has a huge sweet tooth. This recipe plus the Honey Apple Topping recipe satisfied her craving.

Maria's Pepper Steak

This was good because it was easy. I subbed Seitan for the meat (vegetarian). I have cooked Seitan lots of times and I have always had much better results. The sauce was too liquid, and the flavors were unbalances. It needs cornstarch, less vinegar (and probably less honey), and something besides just bell peppers. This recipe needs some serious tweaking to make it good enough to serve for anyone besides yourself. It didn't take long to cook though, and it is cheap. If it were more involved or expensive I'd rate it at 1 or 2 stars.
