Spicy Chicken and Spelt Salad

I have made this so many times and it is always a big hit. The only changes we make are barley for spelt, and tamarin for soy sauce. :D I have made this for several potlucks, served over lettuces leaves. Great fresh summer dinner!

Buffalo Chicken Wraps

Super simple and a great way to spice up a salad, we added shredded carrots and bean sprouts to the wraps. Most of us also omitted the blue cheese dressing. We used chicken we had leftover from baked chicken dinner the night before.

Asian Lettuce Wraps

For our house, a little less hoisin sauce and maybe a touch more chili pepper sauce. Again for us, the hoisin made it a bit too sweet. We also used an additional bunch of green onions. Very tasty and a nice break from our usual "go-tos". I will be making this again. :D

Six Can Chicken Tortilla Soup

I was looking for a recipe that would take advantage of leftover stewed chicken from taco night. I'm so glad I found this! Due to the amount of chicken I had I doubled the amount of corn, tomatoes, and stock (I use reduced sodium stock) and through in the black beans from said taco night. What I ended up with is a lovely tex-mex like stew, with a texture similar to Brunswick stew. Served with cornbread, this was a huge hit and helped me make my chicken go even farther. I think this will be a permanent addition to the dinner lineup after taco night. :D

Hash Brown and Egg Casserole

I made this for a morning event, it was gone in no time! I think the next time I cook this I may brown the hash browns a bit more before adding the eggs for a bit more crunch.

Sweet and Spicy Green Beans

I made this tonight and it was a huge hit. I did reduce the amount of honey by half and used tamarin in lieu or soy sauce as we cook gluten-free. I will definitely be cooking this again!

Mediterranean Lemon Chicken

We roast chicken breast with new red potato and artichoke hearts. The smell through the house is amazing and the taste is even better. This is one of my family's favorite meals!

Chicken and Dumplings I

I have never made this before, but this made it simple. I did need add some more spices(bay leaf, garlic and a little fresh milled pepper) and carrots and peas, but a wonderful easy recipe. Thanks! I will be making this again.
