About this Cook
I have been cooking since I was 10 and I have over 15 years in the restaurant industry. I have developed many recipes and techniques but I hesitate to say I am an EXPERT. People love the food I cook for them and that's enough for me.
My favorite things to cook
I really enjoy cooking meat. Grilled, Broiled, Fried, Steamed, Boiled sauteed or any other way I can come up with. I also enjoy coming up with sauces. I like to challenge myself to come up with unique combinations of traditional ingredients.
My favorite family cooking traditions
I live in South Louisiana and I have a very large family. We have large cook outs and/or boils for Memorial Day, 4th of July, St. Patricks and Labor Day. Of course our favorite is boiling crawfish. I added my own tradition by preparing a special Italion sausage to throw in the boil. Everyone loves it and to ensure I continue to make it my family makes sure I have plenty of beer on hand.
My cooking triumphs
I have developed several entrees and a few appetizers that became menu features for a few major restaurant chains.
My cooking tragedies
When you do R&D as much as I have done you end up with far more tragedy than triumph. I have actually made someone pass out due to SPICEY food.

Mushroom Stuffing
This recipe calls for 12 cups of bread CRUMBS. This has to be a typo. I believe cubes or crutons is what is ment to be used. I made this recipe today and there is no way that 12 cups of bread CRUMBS is accurate. I ended up using 1/2 a gallon of broth just to make it managable. The end result is pretty tasty...but I doubt it is what the intended result should have been. The single star does not represent the quality of the food, rather the accuracy of the recipe. I will be making a second attempt tomorrow, with cubes/crutons, and I will post the results.
