About this Cook
Living with Diabetes for nearly 6 years now has motivated me more to cook at home. Finding recipes that are not only quick and easy but low in carbs is my goal to maintain my lifestyle.
My favorite things to cook
Vegetables! I have to keep a large variety of vegetables in my diet so I'm always looking for new ways to cook them.
My favorite family cooking traditions
Being Mexican I grew up making tamales, rice, tortillas, and various types of meat. I still love the old Mexican traditions and try to in corporate them in my diet as I can.
My cooking triumphs
None that are on paper but my family cannot get over the things I cook, so far my specialty has been cheesecake, mashed potatoes and a large range of Hispanic dishes.
My cooking tragedies
I make a yearly birthday cake for my husband to be and in 2012 is the year it went wrong for the first time (in 5 years) and I actually cried about it >.

Slow Cooker Taco Soup
I really liked this recipe but had to add some additional spices for it to taste like tacos. I used everything as directed and added two packets of Sason. I cooked it on high for 4 hours and then on low for another 5 hours. In the end the soup tasted not only like tacos but had the same flavor as menudo. It was a big hit and a very easy and cheap recipe.

Egg Fried Rice
The one cup of water to cook rice alone is hilarious. Use two cups of water to a boil, add rice and then STEAM your rice. Nonetheless I followed the recipe and the rice was hard as predicted and the recipe was bland. I added some garlic and spicy stir fry sauce and it seemed to help somewhat.

Sausage Casserole
I used Polish sausage and red onions instead. I cooked the sausage and red onions together with seasonings and all mixed together it came out great!
