Southern Style Thanksgiving Green Beans

I am a southern food snob... and these green beans hit the spot! I used 1/4 cup of apple cider vinegar instead of the white distilled. I think this tastes better with the beans. I backed off a little on the salt, added seasoned salt, and two splashes of liquid smoke and Worcestershire sauce each. Oh yes. and a pinch of crushed red peppers. I cooked the concoction in a pressure cooker which saved on the time. 25 mins on pressure and your beans are done!

Tomato Spinach and Basil Soup

I loved this tomato soup. I didn't have tomato puree on hand but I had 5 fresh medium to small sized tomatoes on the vine. I deseeded and peeled the tomatoes and added it to the onion, garlic, carrot and celery which were coarsely chopped and sauteed. The tomatoes boiled down. Once they were cooked, I put it in a blender and pureed it all! I then poured it all back into the pot and added the milk. After the milk was stirred in, I reheated it one last time. I had no problems with clumping or curdling. It was so yummy.. and the best part of it was that I was guilt free. Since I used fresh tomatoes, the soup was fresh and healthy. I added the spinach and basil right at the end before serving with some cheesy wheat toast. Yum!

Persian Yogurt Salad

I used nonfat Greek Yogurt instead of plain, and added about 3 tbl of sour cream for more dimension. Added mint (in addition to dill), parley, ground cinnamon, ground ginger, paprika, a dash of lemon juice and used a cheese grater to have smaller cucumbers into the mixture. It was great! I incorporated all of these other flavors from another recipe I saw.. and it worked beautifully. Ate it with some chicken kabobs and had it as a dressing for my salad. Super healthy and tastes so yummy!!

Chicken Breasts with Balsamic Vinegar and Garlic

I made this for my family. I used margarine rather than butter and it worked out fine. We love mushrooms so I just about doubled the mushrooms (there's never enough!) and served it with some plain broccoli and white rice. Definitely a healthy meal. Everyone loved it.

Authentic Cincinnati Chili

I prepared this up with some left over turkey burgers in the freezer that we needed to get rid of. I thawed them out then started boiling it per the recipe. I added two beef bullion cubes to compensate for the lack of actual beef. Followed everything else and it was delicious! We like our food spicy, so I added more cayenne and chili powder. Served it up with kidney beans and jalapenos. No cheese ( I know) because we are watching the fat and are lactose intolerant, but it still turned out delicious! We had it with thin spaghetti noodles. Yum. Don't forget to SALT SALT SALT the spaghetti noodles before boiling them. One other tip, I don't like having to search for whole cloves, bay leaf, and all spice so I stuck them into a coffee filter bag. Cut out a strip of the coffee filter from the top then used that as a string to tie the bag together. Works perfectly, cheap, and easy to get rid of the spices when I needed to. Really love the ability to skim the fat in this recipe. No more weird orange fat that turns SOLID in the bowl while finishing up dinner!! And of course.. the Hubby loved it.

Egg-Free Low-Fat Oatmeal Cookies

This was good! I only gave it 4 stars since I still made some modifications. I have not tried the original recipe so I am not sure how that tastes. I'm on a low fat diet, so I made some changes that are good for me!(Except for the chocolate. Got to have that!) I replace the all purpose flour with whole wheat flour. For the sugars, I sub: 1/3 cup light brown sugar 1/6 cup white sugar I add:
