Butternut Squash Soup

Very good- although I completely agree that you really only need maybe 2oz of cream cheese, if any. I put in 4oz, and I thought that was even a bit much. I roasted the squash in the oven with olive oil, garlic, salt & pepper, then followed the other reviewer's advice about adding a bit of apple cider and nutmeg while cooking it down on the stove with the 3c water, chicken bouillon and spices. I also made "spiced pumpkin seeds" from the squash seeds to top the soup with, and those were fantastic!!

Light Pesto

Delicious!! I used feta instead of Romano, and a few leaves of baby spinach since I didn't have a ton of basil leaves on my plants. I think we liked it even better than the pesto recipes with all the oil in them!

Italian Spaghetti Sauce with Meatballs

I used 3 cans of diced tomatoes, added a little more sugar and salt, and blended the sauce after simmering. Very easy and very good!!

Egg-Free Low-Fat Oatmeal Cookies

These are not Grandma's soft, melt-in-your-mouth chocolate chip cookies, but they're one of the healthiest ways I've found to trick that after dinner sweet craving. I added a few chocolate chips and some Better 'n Butter peanut butter (only 2g fat- find it at Trader Joe's), which really sealed the deal.

Favorite Chocolate Cookies

5 if you don't overbake them (10 minutes), 3 if you leave them in even the tiniest bit too long. I think I saw my husband eat 3 of them in one bite.

Holiday Cranberry Chutney

The perfect appetizer to get you in the holiday spirit! Smells absolutely fabulous while cooking, and tastes even better. We tried it over pork too, which my husband liked- but I prefer it over cream cheese with triscuits. Try it- you won't be disappointed!
