Apple Crisp II

This crisp was easy to make and turned out great. I wasn't able to find good tart apples, so I cut the sugar to 1/2 C. and gave a good squirt of lemon juice on top of the apples before sprinkling on the oatmeal topping. I got the tart flavor I was hoping for and the sweetness is perfect.

Delicious Ham and Potato Soup

Simple, easy and tasty. I doubled the water and rue and added some extra potatoes because I like a bit more juice! So good served with cheese on top!

Slow Cooker Chicken Taco Soup

Open some cans, toss them in a crock pot, add seasoning and chopped onion, toss in chicken, turn on before you go to work, shred chicken when you get home and WALA! Easiest tastiest soup EVER! Thanks for sharing!

Fifteen Minute Chicken Chili

Very quick, tasty, and easy!!!! I baked my checken and then shredded it. I love shredded chicken in soups! Sauteed the cooked shredded stuff in the oil and spices and then added the rest! I actually only did one can of tomatos because I didn't have two and I really like it as is!! Also, didn't have corn, but will try it next time with it!

Baked Dijon Salmon

Num!!! This is so quick and easy! I was home alone, so I did less butter but kept the mustard and honey the same for a nice thick sauce. I dunked the salmon in and then thought, what the heck and just poured the entire mixture into a baking dish. I then sprinkled on the breadcrumb mixture (which I added some salt and pepper to) and tossed in some asparagus right in with it all. Baked for 15 minutes and wa-la! A quick and easy meal for a single gal at home! So tasty! I'll cannot wait to impress some guests with this meal!

Pressure Cooker Italian Chicken Soup

Excellent and hearty soup! I cooked it on stovetop because I don't have a pressure cooker. Couldn't find italian turkey sausage so sauteed regular turkey sausage with italian seasoning and paprika. I also added some italian seasoning, paprika, salt and pepper to the broth while it simmered. It was delicious with parmasan cheese on top and a piece of toasted bread on the side. Already looking forward to having it for lunch tomorrow!

Coconut Curry Tofu

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

I combined this recipe with the chicken cordon bleu recipe II from this website. Tore up bacon and put on the inside with spinach and ricotta, dipped outside in flour/paprika mixture, browned in melted butter, and put in oven for 30. Used leftover juices from when I browned, added 1/2 dry white wine, half chicken bullion cube. Let simmer added 1 cup cream mixed with one tablespoon corn starch to make awesome sauce. Served with rice and asparagus, extra sauce on asparagus! Nummy!

Curried Butternut Squash and Pear Soup

Love this soup! So good on a cool fall day. I doubled the curry, garlic, and ginger for some extra punch. Served with cilantro and a big thick slice of garlic bread.

Chicken Cordon Bleu II

Rave reviews from all who ate it...will definitely be an "in-law" meal! I only had three eating, so used three chicken but kept the sauce the same...double the sauce was perfect...although, I probably could have used even more! It is sooooo tasty! I browned the chicken in butter and then placed the chicken in a baking pan and baked at 350 for 25 min while I made the sauce. After chicken was done, I added any juices that came from the baking to the sauce, and added the chicken to the sauce, scooping it on top. I then served with rice and seasoned potatoes. Looking forward to trying again with a bit more sauce and asparagus! Num!!!

Blender Hollandaise Sauce

Easy, ingredients are commonly around, and tastes great!!! I added a bit more mustard, gave a good squeeze to a fresh lemon half, and shook the hot sauce bottle more then once. Num!!!

Easy Pancakes

I give these pancakes a four, with some changes. I followed the recommendation of 2tsp baking powder. I also added 2T brown sugar instead of white, a tsp of cinnamon, and I added a tsp (and a bit more) of vanilla. (Many reviewers cut back on the salt, but I thought they tasted fine with the amount shown in the recipe. I also added chocolate chips to half the cakes. The flavor after these modifications was great, however, the texture left a bit to be desired. I thought these took a bit too much elbow grease to cut into. I may try add a bit more baking powder to see if that fluffs them up a bit, hopefully without altering the flavor. Overall, these taste good in a pinch!

Bananas in Caramel Sauce

Soooo good! Wonderful on sour green apples! I definitely cooked it longer then what was suggested to get warm gooey caramel. Also threw in a couple pinches of salt as well as a tsp of vanilla after I added the cream. PERFECTO!
