Basil Pork Chops

Quick and easy--- and tasty too!!! I wanted to broil them, so followed the recipe exactly except put them in the oven on broil about 4 inches from the top for 5 minutes each side (4-7 min depending on oven and thickness). They were tasty--- and I didnt change any ingredients.

BBQ Tuna Fritters

This was great and so cheap and easy. I put a little extra tabasco sauce in and some red pepper flakes to spice it up some more, and with tomatoes, red onion, pickles and a little mayo on a bun it hit the spot. I think next time I might put a spoonful or two of Carribean Jerk sauce in there as well... Thanks for something cheap and easy!

Strawberry Spinach Salad

Really liked this one! Super easy summer salad. Instead of store bought dressing, I made my own strawberry vinaigrette from this website, which was wonderful. I also made my own bacon bits by frying bacon, letting it dry on a paper towel and keeping them in somewhat larger pieces when I tore them up.

Grilled Bruschetta Chicken

Really good and easy recipe. I didn't have fresh basil, but the dried stuff works just as well. I recommend 3 roma tomatoes and then just even out the cheese to find a good ratio. I as well used the George Foreman grill to grill the chicken, then put the mixture on top of the chicken in a baking dish and baked for 5 minutes just to warm the topping. I made some pasta on the side and had extra topping so put in over the pasta which was nice as well. Very good, will make again!

Italian Spaghetti Sauce with Meatballs

I only made the meatballs and used a jar of spaghetti sauce. Since lots of reviews were saying they were "bland" I added about 3/4 cup diced white onion, 2 cloves garlic, a little extra garlic salt, dried basil and made sure I had seasoned bread crumbs. Someone had mentioned adding a little milk and it really made them moist. Overall, great though!

Oatmeal Pancake

I am not doing the southbeach diet but I still make these pancakes on Sunday morning because they are healthy, really fill you up (not with sugar though) and taste great! I highly recommend them with some razberry jam.

Chicken Marinara

This recipe was super easy, although the sauteed garlic and onions to add to the marinara sauce was not needed at all (most sauces these days are already packed with flavor). I had some left over provolone cheese so instead of just sprinkling some parmesan, I placed some sliced provolone on top of the chicken after baking it for 35min and put it back in the oven for another 10 minutes. This is definitely an easy recipe and a keeper!
