Cherry Tomatoes Filled with Goat Cheese

My tip is to not use light goat cheese as they add extra sodium and it overwhelms the tomato. It wasn't as easy as I had thought it would be to remove the tops and carve out the middle so be prepared to use some muscle and ruin some cherry tomatoes in the process. It's a different type of appetizer that looks better than it tastes. Overall it was okay but I wouldn't make it again.

Chicken Puffs

I really thought I'd love this recipe but it got the big thumbs down in my household. With the butter and cream cheese (even light versions), it was just too creamy and didn't really have much flavor. I would have preferred the mixture with something that offset the creaminess and added crunch like a veg. The crescent rolls are very doughy so it really needs something savory and not just bland creamy chicken inside. I definitely will not be making this again.

Brooklyn Girl's Penne Arrabiata

I really understand why this received so many good reviews. This was very time consuming and wasn't worth the effort, time, and clean up. I added one full teaspoon of the chilli paste - used paste instead of flakes - and it was definitely spicy but it's a good thing because the recipe was so bland otherwise. I also added sliced mushrooms which added some depth but it's the chopped tomatoes that really ruin this recipe. Tomato sauce would have been a better choice especially will pasta like penne which lacks flavor and needs something more moist to add to it. I also added soy cheese but even that couldn't save this recipe. The breaded chicken is a good idea but served on the side, not in the pasta. I won't make this again. My husband wasn't a fan and I couldn't eat it so it was a waste for us.

Luau Chicken Sandwiches

I thought this was just OK. I didn't have a grill so I pan fried the chicken and poured the marinade over it after marinating the chicken all day. I cooked the chicken for four minutes on each side and it came out tender but I didn't taste any of the marinade which was a shame. I pan fried the pineaple ring first which really was all that I tasted on this sandwich. Also, the roll I used was too small for a large, thick piece of chicken. I would flatten the chicken before marinating next time and cut it in half, and use a heartier bread that is larger. My husband enjoyed this sandwich more than I did but he, too, found it difficult to eat because of the size. I served it with an artichoke dip & pita chips which went over better than the actual sandwich.

Lower Fat Banana Bread I

I added walnuts, cinnamon & vanilla but this was still quite plain and a bit boring. Next time I'll add reduced fat cream cheese, and more bananas.

Glazed Meatloaf I

I thought the meatloaf was dry and probably didn't need to be cooked as long as it did but perhaps it's because I used lean mince which cooks quicker. I liked the ketchup used but I didn't taste it in the meatloaf, only as the glaze which disappointed me. I served this with mashed potatoes and a salad and made it the all American dish. I would make this again but I'd cook it for only 40 minutes rather than the full hour and I'd use more ketchup in the recipe to make it more moist.

Jamie's Minestrone

This really is more like a stew than a soup with the amount of broth & water the recipe suggests so I had to add more water in order to make it an actual soup. There are way too many vegetables in this and it's a lot of working chopping everything up by hand (no food processor). I think there was a bit too much tomato sauce and would use more chicken broth next time. Also, it needed a lot of salt & pepper because it is basically a very bland, vegetable soup. The parmesan cheese makes an excellent touch and definitely makes for a lovely presentation. I also didn't think there was enough pasta so I added more, because afterall, that's what minestrone soup is...pasta, beans & veg in a tomato based broth.

Tomato Cucumber Salad with Mint

I thought there was way too much vinegar in this recipe and it completely overpowered the dish. I would make it again but I would dice the cucumbers, use less onion, and half the vinegar. I thought the mint taste was subtle and quite enjoyed that twist.

Cheese Ravioli with Three Pepper Topping

This recipe was totally boring! I added garlic, salt, pepper, lots of crushed chili flakes, and basil but it still couldn't save it. There are too many onions and I don't think they should be chopped, I think they should be sliced and pan fried first with garlic. I would also add a lot more parmesan cheese. I only used one cup of broth as suggested and even that was too much. This didn't do anything for the ravioli which is the whole point so I won't be making it again.

Caesar Salad Supreme

This recipe was very good but my one complaint is that there is way too much garlic in it. I'm a big fan of garlic but the overdose of garlic in this recipe slightly ruined the taste for me because it's all I could taste and even afterwards, I couldn't get the taste out of my mouth. I omitted the anchovies because neither my husband nor I like them, and I used extra light mayo to make it a bit more healthy. I think the recipe also calls for more mayo than what is needed but you can just add to the lettuce what you like. I've never made my own croutons so it was nice to learn how to and it was super easy & quick. I would make this again but use only half the garlic.

Chicken Nuggets

I was impressed at how tender the chicken was after cooking it this way but the batter didn't stay on very well. I added some breadcrumbs for a better batter in addition to some seasoning (salt, pepper, onion, garlic). It was good but nothing special and probably would have come out just as tasty and more healthy if baked.

Greeked Zucchini

I wasn't too impressed with this recipe. It needed better cohesion and even though I cooked it longer than called for, it still seemed a bit sloppy to me. I wasn't sure how to present it so I put it in a small bowl. personally I think the zucchini should be cut lengthwise and then that's it, not into slices. Then I would put some feta cheese on the zucchini and again on the top. And I definintely would pan fry the onions and pepper first before layering. The flavor was OK with rosemary, salt and pepper but just a boring dish overall.

I was really disappointed in how boring this recipe turned out. I think it needs more consistency with something on the base, maybe even mashed potatoes on the bottom then layered with the meat & veg, and topped with the mashed potatoes again grated with cheese.

Japanese Onion Soup

I'm quite surprised at all of the positive reviews of this soup. It was extremely bland so I added salt & pepper but even that couldn't save the soup. I really did not care for the soup and would not make it again. I prefer something with more flavor and why it's called Japanese onion soup when it's really mushroom soup is the real mystery.

Japanese-Style Sesame Green Beans

This recipe is super easy and very tasty. I recommend cooking the green beans a few minutes longer to really bring out the flavor and give it a crunchy texture. I also added some chill pepper flakes to spice it up.
