Creamed Eggs on Toast

I scaled this down to 2 servings, and had enough of the egg mixture to top 4 slices of toast. I had never tried anything like this before. Tasty!

Chicken Noodle Casserole I

This was 'OK' as written. The second time I made it, I made some changes that would boost it to 4 stars. Used 6 boneless, skinless chicken thighs instead of breasts, added a small can of sliced mushrooms to the soup mixture and some spices (garlic, onion powder). Also, my family did not care for the cracker topping. Topped with shredded cheddar. More suited for our tastes this way, but decent base recipe.

Easy Chicken Rice Casserole

We did not care for this recipe. I cooked this for over 2 hours, and the rice never completely cooked all the way. I am thinking the recipe should have called for instant rice, instead of regular white rice. This is also very bland as written. However, all the spices in the world could not have made up for the undercooked rice. This recipe needs quite a few adjustments in order to be edible.

Baked Denver Omelet

Excellent! Due to our personal preferences, I reduced the peppers and onions to 1/4 cup each, and increased the cheese to a full cup. Served with a side of bacon and sliced tomato for a deliciously easy, low-carb meal.

Easy Chicken Casserole

This was pretty good! I added some seasonings to the chicken, and some frozen peas to try and sneak in a veggie. I also doubled the sour cream and used 2 cans of the soup because I wanted enough sauce to serve over rice. Only used 12 crushed crackers. Any more seemed like it would be overkill. Next time, I will try with broccoli. Very good base recipe. Thanks!

Charley's Slow Cooker Mexican Style Meat

I used a trimmed beef brisket. Skipped the browning step. Just put the meat directly into the crockpot and followed the rest of the directions. Added some cumin and a beef boullion cube, and used half the hot pepper sauce the recipe called for. Cooked on high for 6 hours, removed, shredded with two forks, and placed back in for another 2 hours. Delicious!

Delicious Avocado Egg Salad

This was delicious as written! Perfect amount of spices and mustard for me. I had it on Ezekiel bread, and this is the first filling lunch I have had since trying to watch what I eat! Will make this again and again! Thank you!

Kris' Amazing Shredded Mexican Beef

This was our Cinco De Mayo meal for this evening! I did not change a thing (except, I discarded the chipotle peppers before I shredded the meat and returned it to the crockpot), as I was able to get a bottom round roast that was pretty close to 4 lbs...This was delicious! My husband and I really enjoyed the flavors. My son, on the other hand, drank a glass of juice, two glasses of water, followed by a glass of milk because it was so spicy! He did clean his plate, though! I think I will cut back on the amount of chipotle peppers next time. But, this was really good as written, if you like spicy foods. Will make again. Thank you!

Salt and Vinegar Chicken

We liked this recipe. I used bone-in thighs, so increased the initial baking time to 40 minutes, and then kicked the temperature up to 425 after I drained off the marinade, and cooked for another 20. Otherwise, I followed this to the letter. Very good!

Slow-Cooker Pepper Steak

This is great as written, but I did make some modifications the second time. I used stew meat because that was what I had on hand, and a 12 oz bag of frozen Kroger brand 3 Pepper and Onion Blend, to eliminate the chopping because I was pressed for time. I also increased the water to 1/2 cup, used 2 bouillion cubes instead of one, and 2 Tbsp of cornstarch all because I wanted it to make more gravy than the last time. Very good either way! My family enjoyed this both times, both as written and with the modifications.

Quick and Easy Pancit

This was just OK. We were not a huge fan, and I would not make again. When I told my Filipina friend I had attempted to make pancit, and showed her this recipe, she laughed. Her family recipe that I had previously fallen in love with includes shrimp, pork shoulder, green beans, shiitake mushrooms, patis (Filipino fish sauce), and Chinese wheat noodles, so there are many differences. While this was meant to be a 'quick and easy' version, the next time I want pancit I will just call her.

Caldo de Res (Mexican Beef Soup)

This was out of this world! I substitited zucchini for the chayotes, and added a few seasonings (garlic, cumin, and Goya adobe seasoning). I also added a couple of squirts of lime juice from concentrate to the entire pot. Otherwise, followed to the letter, and it was to die for! I thought my picky eater would turn his nose up because of all the veggies, but he ate two bowls, which is saying a lot for him. Will definitely make again! Thank you!

Six Can Chicken Tortilla Soup

Three stars as written. The second time I made this, I used rotisserie chicken, and added a packet of hot taco seasoning, some cilantro, onions, and a couple of Tablespoons of lemon juice. With those changes/additions, this is a five star recipe, and is really every bit as simple. The lemon juice put this over the top, I think. Yum!

Classic Goulash

This was decent, but missing something, as other reviewers said. I added more macaroni than the recipe called for, but it was still soupier than I expected. This made a TON of food. I will maybe play with the spices for my leftovers, as my family of three may be having this for DAYS. Not sure I would make this again otherwise.

Slow Cooker Beef Vegetable Soup

Some of these reviews crack me up. If you don't like the ingredients, find another recipe! There are plenty of them on this site. Don't rate a recipe you haven't tried, people! ...Anyway, my family devoured this. We are not big fans of carrots, so instead of a can of carrots, I added a can of peas and carrots because the carrots were diced smaller. Plus, this gave me the opportunity to sneak peas in. That was the only change I made. Everyone loved it. Perfect easy, throw-together meal for a busy weeknight. Does NOT taste like canned soup, despite the canned ingredients....And veggies from a can are still veggies, and way better for you than the fast food alternative for a lot of busy families.

Winner, winner! Chicken dinner! Made this exactly as directed, except used bone-in chicken breasts. Amazing. When I read the ingredients, I thought, "no way". But, was pleasantly surprised. Whole family loved it!

Steff's Shepherd Pie

I was pushed for time, so I used Idahoan Instant Mashed Potatoes, and sauteed frozen chopped onion with the ground beef, instead of waiting to add the fresh onion. I also seasoned the ground beef mixture heavily with garlic salt and black pepper. After I baked it at 350, I kicked the broiler on, topped with lots of grated Parmesean cheese , and ran it in for 7 minutes to brown, and form a "crust" over the top...delish! This is a keeper!
