Good Old Fashioned Pancakes

Excellent pancakes! Fast and Easy ~ I've made them twice so far. I substituted the butter for applesauce to make it healthier...and then I used butter to cook the pancakes in. I cut down the salt as recommended by others toe 1/2 tsp and used 1.5 cups of milk.

Chantal's New York Cheesecake

So easy and yummy. I topped mine with blueberry pie filling ~ delicious! Could not resist eating on same day, but definitely recommend letting cheesecake cool overnight in fridge for better texture ~ allows it to set better. I read about the hot water bath, but also read about water leaking in, so i filled a tray with water and put it on a shelf underneath the cake ~ worked well, no cracks. Used the recipe for crust from other reviewers and not the one listed here. Got rave reviews for that too!

Spiced Pot Roast

Followed the directions as indicated, substituted pitted dates for raisins because that is what I had in the pantry. Yummy and easy - super flavourful - good gravy consistency with all the flour added.

Beth's Spicy Oatmeal Raisin Cookies

I substituted the shortening for applesauce. After I mixed all the ingredients except for the raisins. I divided the dough into 3. In one batch I put raisins, in the second batch I put craisins, and in the third batch I put chocolate chips. It was yummy, and chewy, and the chocolate chip batch was by far the most well received. But having the variety was good for different preferences.

Apple Crisp II

Easy and Yummy! I used less butter and mixed in some water to the crumble mixture to make it slightly healthier. Otherwise I stuck to the recipe.

Cranberry Pistachio Biscotti

So incredibly yummy. The hardest part was shelling and skinning the pistachios. I used whole wheat flour and added some orange zest. Soo good and easy to!

Maple Salmon

Did not add garlic salt - as other reviewers stated soya sauce is already "salty" and added more garlic cloves (4 large). Otherwise, super easy and delicious - the sauce is delicious! Served with rice and green beans.

Hamburger Steak with Onions and Gravy

This was really delicious. Quick, easy, and open to substitutions based on what I had in the house (ie. garlic instead of garlic powder, flavoured bread crumbs, onion salt - use less salt, vanilla instead of sherry, beef broth liquid added to water , more beef - 1.27 lbs - then called for, cooked half of the prepared balls 3/6 for the amount of gravy asked for...perfect). Yummy and tender and moist. So easy!

Yummy Honey Chicken Kabobs

Marinated overnight and placed on skewers. Super duper easy and yummy! As previous posters recommeded - soak those skewer sticks prior to BBQ. Classic Honey Garlic flavour - can't wait to try it with wings (I used chicken breast this time).

Coconut Macaroons III

i used 1 tsp vanilla and 1 tsp almond extract. The cans of condensed milk that i bought are a different volume then the one in the recipe - remember to check the ml. It was very easy to prepare and yummy!

Delicious and EASY! Love it. Substituted a little bit of the butter for olive oil...didn't really measure how much. Baked for 15 min with cover and half hour without cover (45 min total).

Zucchini Brownies

I changed the 1/2 cup oil to 1/4 cup oil and 1/4 cup applesauce to make it healthier. I didn't add walnuts because I didn't have any and added some peanut butter chips. In the last 3-5 minutes i sprinkled some chocolate chips on top and spread it with a spatula instead of the frosting. The batter itself wasn't very sweet, with the topping it was just right. Received great review from colleagues and friends, especially those who are not a fan of overly sweet treats. Very moist, nobody could tell that it was zucchini!

Best Bread Machine Bread

I added 3 tbsp sugar because I prefer sweeter bread and used 2 cups of whole wheat bread flour and 1 cup of all purpose flour. I was afraid of using this method because of the instructions that come with the machine, however, I did it this way and it turned out beautifully!! (I even had less yeast then recommended because I ran out - just under 2 tsp). A good solid basic bread recipe.

Best Ever Chicken Casserole

Yummy Yummy Yummy! I took the advice of the other writers and used cream of mushroom soup (all i had), added chopped celery, some garlic powder, and used Bran flakes instead (again, all I had), I think I also used less mayo...but I didn't measure anything...Oh, and I didn't boil the chicken, I just pan fried it in a little bit of olive oil. So all in all, this recipes is quite adjustable to the contents of your pantry :)

Delicious Pumpkin Bread

As per other's advice, I used almost 1/2 cup oil 1/2 cup applesauce with some flaxseed. I used only 2 cups of sugar (1 white, 1 brown). I doubled the spices and added allspice and vanilla as well (1 tsp as well). I used 1/2 cup of raisins. It made 1 loaf and 18 muffins. Loaf I baked for 60, muffins I baked for 30 mins ~ all at 350F. It turned out very well - could use a bit more raisins - next time I would use 3/4 of a cup of raisins instead of 1/2. I would definitely make it again ~ very flavourful and not very unhealthy after the adjustments.

Carrot Cake III

Cake turned out really well. I read the reviews and adjusted like recommended 1) 3/4 cup oil + 1/2 cup apple sauce 2) 1 cup white and 1 cup brown sugar 3) 3 tsp cinnamon 4) 3 tsp vanilla 5) 1 cup crushed pinapple drained of fluids 6) 1/4 tsp nutmeg. I made 2 x 9" cake pans of cake, I cooled it on rack and then cut it in half, then used the icing mixture in the middle and on top to make it a double layered carrot cake. Oh, I also only used 2 cups of sifted icing for the frosting..I made it with 4 before and it was WAY too sweet.

Double Tomato Bruschetta

I halve the recipe because 6 tomatoes make a lot of bruschetta. Easy to follow tasty recipe! Like other reviewers, I toast the bread with the cheese and have people add however much bruschetta they want on top, otherwise, I'd probably make a mess in the oven and have soggy bread to boot. I used tomatoes on a vine one time and it made it very watery, I would recommend sticking to the plum tomatoes.

Playgroup Granola Bars

To make it healthier, I substituted the oil for applesauce. I didn't have wheat bran, so I just used all whole wheat flour. I think next time, I will try it with ground flax seeds (full of good omega fats). I used craisins instead of raisins (because my sister doesn't like raisins) and I threw in some chopped almonds and shredded coconut for flavour. These were healthy and delicious. I know I changed it quite a bit, but I don't think I could've made it without this base recipe to build off of. Thanks!

Cottage Cheese Pancakes

simple, nutritious and delicious. i also added vanilla and cinnamon, changed the AP flour to whole wheat flour and used apple sauce in lieu of oil. I did use butter for the pan though. also, i recommend using the quarter cup size for the pancake as it makes it easier to turn over.
