Butternut Squash Casserole

Yummy, this is the first time I ever made butternut squash! I prepared the squash by cutting it in half length and width wise (for a quicker cook time), removed the seedy/fibery centre and baked it flat side down for 375-400F till it is soft (varies based on size of squash - mine took around 45 min) - easy to scoop out soft squash and mush with a fork when cooked. Like others I halved the sugar and I also substitued half of the margerine/butter for applesauce. For the toping, I used Quaker Oat Squares - Maple and Brown Sugar (crushed)instead of the vanilla wafers. The maple flavour goes well with the squash. Definitely will make again, friends were asking me for the recipe! Note: Topping goes soft by Day 3 - if i wasn't saving it for somebody to try, I wouldn't have found this out!

Creamy Rice Pudding

Fast, easy, and delicious. I put in the sugar near the end and before I put in the egg...I scrambled and mixed it with the last 1/2 cup of milk. A little less sugar next time will suit my taste more. Although I like raisins, I like it better without, that's just my personal preference though...a little cinnamon sprinkled on top before serving is also nice. Thanks for the recipe!! This is the second time I've made it.

Hamburger Steak with Onions and Gravy

This was really delicious. Quick, easy, and open to substitutions based on what I had in the house (ie. garlic instead of garlic powder, flavoured bread crumbs, onion salt - use less salt, vanilla instead of sherry, beef broth liquid added to water , more beef - 1.27 lbs - then called for, cooked half of the prepared balls 3/6 for the amount of gravy asked for...perfect). Yummy and tender and moist. So easy!

Banana Pancakes I

This was alright, I found that the flavour didn't really stand out for me and I used a very ripe banana. I followed other reviewer suggestion of mushing banana in a sandwich baggie ~ made it easy to mush. Easy to make. Required more banana for more flavour. I tried a variety of different toppings including: peanut butter ***, butter ***, maple syrup ****, maple syrup with butter *****. As indicated the last option is the most recommended, but the others tasted good as well.

The Ultimate Brownie

Easy to make and open to healthy substitutions. Used whole-wheat flour and substituted 2/3 of the required butter with apple sauce. Topped with icing sugar for presentation. Freezes well.

Spaghetti Squash I

This is an easy recipe to follow. I enjoyed it much more with pasta then with spaghetti sauce. But must have lots of feta and definitely hits the spot with some nice olives mixed in.

Good Old Fashioned Pancakes

Excellent pancakes! Fast and Easy ~ I've made them twice so far. I substituted the butter for applesauce to make it healthier...and then I used butter to cook the pancakes in. I cut down the salt as recommended by others toe 1/2 tsp and used 1.5 cups of milk.

Pork Chops with Dijon-Dill Sauce

Pretty good. I used chopped garlic and some salt instead of garlic salt because that's all I had on hand - fast, tasty, and the sauce was delicious and easy. I would definitely make it again.

Cranberry Pistachio Biscotti

So incredibly yummy. The hardest part was shelling and skinning the pistachios. I used whole wheat flour and added some orange zest. Soo good and easy to!

Easy and Yummy! I used less butter and mixed in some water to the crumble mixture to make it slightly healthier. Otherwise I stuck to the recipe.

Salmon Fillets with Creamy Dill

Yummy and easy. I used mostly yogurt instead of mayo. I threw in a couple of tbsp of mayo just to make it a little sweeter/creamier. But it was good the way it was. I also used dijon mustard.

Peach Cobbler for Two

I think this recipe is good for 3 people. I used frozen mixed berries instead of peaches because that's all I had on hand. This recipe is wonderfully versatile. However, I felt that the topping was not bready enough to make it really cobblery.

Playgroup Granola Bars

To make it healthier, I substituted the oil for applesauce. I didn't have wheat bran, so I just used all whole wheat flour. I think next time, I will try it with ground flax seeds (full of good omega fats). I used craisins instead of raisins (because my sister doesn't like raisins) and I threw in some chopped almonds and shredded coconut for flavour. These were healthy and delicious. I know I changed it quite a bit, but I don't think I could've made it without this base recipe to build off of. Thanks!

Beth's Spicy Oatmeal Raisin Cookies

I substituted the shortening for applesauce. After I mixed all the ingredients except for the raisins. I divided the dough into 3. In one batch I put raisins, in the second batch I put craisins, and in the third batch I put chocolate chips. It was yummy, and chewy, and the chocolate chip batch was by far the most well received. But having the variety was good for different preferences.

Best Ever Chicken Casserole

Yummy Yummy Yummy! I took the advice of the other writers and used cream of mushroom soup (all i had), added chopped celery, some garlic powder, and used Bran flakes instead (again, all I had), I think I also used less mayo...but I didn't measure anything...Oh, and I didn't boil the chicken, I just pan fried it in a little bit of olive oil. So all in all, this recipes is quite adjustable to the contents of your pantry :)

Downeast Maine Pumpkin Bread

yummy yummy yummy! I used whole wheat flour and 2 cups white sugar and 1 cup brown as recommended. i also used 1/2 cup veg. oil and 1/2 cup apple sauce. I made a loaf and two batches of muffins and in some of it there were raisins, some there were walnuts, some there were chocolate chips. i really liked having the walnuts in the loaf. It taste much better the second day and it goes amazingly well with coffee...so good, i had two cups of coffee so I could use it as an excuse to eat another slice!

Chantal's New York Cheesecake

So easy and yummy. I topped mine with blueberry pie filling ~ delicious! Could not resist eating on same day, but definitely recommend letting cheesecake cool overnight in fridge for better texture ~ allows it to set better. I read about the hot water bath, but also read about water leaking in, so i filled a tray with water and put it on a shelf underneath the cake ~ worked well, no cracks. Used the recipe for crust from other reviewers and not the one listed here. Got rave reviews for that too!

Apple Pie by Grandma Ople

Delish!! and so easy.. I took a pie crust recipe from this website and made a lattice top layer crust. Served with vanilla ice cream ~ this apple pie was out of this world!
