Rice Balls a la Tim

Reviewed: Feb. 28, 2011
These are just alright. Very time consuming and not even worth it. The balls were hard to form and kept falling apart. I even started over making them by adding more cheese to make them stick and they still fell apart. My fiance enjoyed them, but the next time I make them it will be a Sunday night dinner. Much too time consuming for a weeknight meal.

Meatball Nirvana

Very good and very easy to make. Hubby cut up his meatballs and ate them in a sandwich and I had them over pasta. I might add a little more Frank's Red Hot next time to give them some more kick.

Over the Top Nachos

These were so good! I heated the chips up in the oven for a few minutes on a cookie sheet before assembling the nachos.

Simple Beef Short Ribs

Reviewed: May 13, 2010
The.most.delicious.thing.I.have.ever.made!! Thank you so much for this recipe. My hubby and I both love short ribs and order them whenever we see them on a menu. He said they tasted better than at a restaurant -- if that's not a rave review, I don't know what is! I added a second clove of crushed garlic (we love garlic) and served it with mashed potatoes and carrots. The sauce def. makes a nice gravy. I used a can of Bud Light because it was all I had. Can't wait to make it again!

Flip Flop Grilled Chicken

Reviewed: May 10, 2010
The sauce smelled so yummy when I heated it on the stove. I also added a crushed clove of garlic. Although the chicken was very, very juicy, it was essentially flavorless. I would probably make this again but marinate the chicken in the sauce in the fridge for a few hours.

Baked Garlic Parmesan Chicken

Delish! I used chicken cutlets.. this is such a better and healthier way to make some yummy chicken fingers. I served them over pasta with homemade sauce.

Garlic Cheese Chicken Rollups

Reviewed: Jun. 3, 2009
Yummy and easy! I used Philly chive & onion cream cheese and added 2 cloves of garlic and some fresh parsley and blended it all together in my mini cuisinart. BF thought it was delish but something was "missing". I may wrap a piece of turkey bacon around it next time.

Chicken Scampi II

Reviewed: Jan. 29, 2009
Can anyone tell me why my sauce turned BLACK? I followed the directions to a T and the sauce turned black and the garlic burned. It still tasted alright but I don't know what went wrong.

Spaghetti Italian

Reviewed: Jan. 27, 2009
Delish! I made some alterations based on other reviews. I sauteed some chopped onion in olive oil in the sauce pot because I'm an onion lover. I think it added some nice flavor to the sauce. I didn't add any salt as others as suggested, and used reduced sodium tomato sauce. I added some sugar toward the end because it still tasted slightly acidic. I also added some red pepper flakes to the sauce because I used sweet Italian sausage and wanted some kick to it -- which it def did! I let it simmer for 2 hours and it was so good!

Yummy! My boyfriend scarfed this down and kept commenting on how much he loved it. Only change is that I used leftover rotisserie chicken instead.

Chicken Scarpariello

Reviewed: Nov. 25, 2008
So delicious! My boyfriend gobbled everything up I'm upset I don't have any left overs for lunch! Couple changes..I used chicken broth instead of bouillon and a small onion instead of the shallots and used chicken tenderloins (instead of chicken breast)..I thought they were perfect because it eliminated having to cut them down to size. This will absolutely be in our regular dinner rotation from now on.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Reviewed: Nov. 20, 2008
After reading many reviews for this recipe I had very high expectations. Unfortunately, I was disappointed. I guess I never realized that I didn't have an affection for blue cheese. My boyfriend loved it, but I thought the whole thing just tasted weird. I wrapped the chicken in (turkey) bacon like others had suggested and even that didn't taste right.
