These have been a Christmas standard for years at my house, but I have to tell you about a modification for a HUGE batch of these. I got invited to a cookie exchange this year and needed 8 dozen of these to take. This cookie is very time consuming to make, but totally worth it if you make a small batch. I couldn't fathom the hours it would take to make it the regular way, so this is what I did.
I made a quadruple batch and added about 1/2 c extra of flour. Then I chopped up 3 jars of cherries, drained and mixed it in. Dropped them with a small cookie scoop (about 1-1/2 t), baked for 12 minutes and let them cool and refrigerated them for a while. Meanwhile, I melted some good quality milk chocolate coating and dipped them in that. The coating was firm, keeping the cookies moist. I won "Best Tasting Cookie!"
