Shredded Potato Salmon Cakes
These were good (left out the capers because I can't stand them) but I have to admit, the presence of the potato wasn't really noted. I think next time I'll go ahead and cook the potato and have it on the side.

Chicken and Biscuit Casserole
This was REALLY good. However, I should note that I went with another reviewer's suggestion of using a cup of half & half (1/4 of the broth ingredient) to 3 cups chicken broth. Made it rich and creamy, which is the way I like this kind of dish. I noticed another reviewer's comment that her biscuits soaked up all of the 'gravy' but also noticed that she said she used drop biscuits. I would like to point out that using drop biscuits *will* soak up the gravy, which is possibly why this recipe suggests rolled biscuits instead. I would go with the biscuits the recipe states or make your biscuits separate rather than baking them with the chicken mixture. This would also be great over mashed potatoes or toast.

Tater-Dipped Eggplant
Fabulous! I cut mine into thick chunks and only used a tablespoon or two of butter to cut fat and calories and it still came out nice and crispy. I'm going to save this recipe because it would be a great way to prepare the eggplant for Eggplant Parmesan without having to fry it first.
