Salmon Croquettes

Reviewed: Feb. 12, 2012
I acutally had all of the ingrediants on hand; even the wheat germ. I was a little leery of coating these in wheat germ since I didn't know how much of an impact they would have on the taste. I used some roasted garlic fine herb bread crumbs instead. However, I was still curious as to how the wheat germ would taste since I don't have a clue what made you decide to try it. And to my surprise it was very tasty! I also added some cayenne pepper to the mix for a little kick! And I used grape seed oil.

Key Lime Pie VII

Absolutely wonderful and I'm not a key lime pie eater! Followed the other reviews and used lime juice instead of trying to squeeze the limes one by one. Very, very creamy and sweet goodness!

Baked Salmon II

Reviewed: May 17, 2011
This recipe is an excellent marinade for salmon. It is very tasty. I need to incorporate more salmon into my diet because I am Vitamin D deficient. Salmon is one of the few natural sources of Vitamin D and this marinade has really helped me with that. It covers up the taste that usually makes me cringe.

Easy Tilapia with Wine and Tomatoes

Reviewed: Apr. 12, 2011
Oh my gosh, this is amazing and super easy to make! I seasoned my filets with salt, Mrs. Dash Original, garlic pepper blend, fresh garlic, fresh basil and tomatoes. I only used 1 tablespoon of butter and sliced small slivers to cover the filets. I only used about 3/4 cup of white wine and drizzled over and around the filets. Baked in a 9x13 dish covered in foil. And like others 20 mins @ 425 degrees. Wonderful flavor!!!

The first time I made this cake, my husband and I could not belive how moist and fluffy this cake cake out. The second time, I made it for a family dinner part. It was gone down to the last crumb. Made the recipe as is both times.

Aunt Johnnie's Pound Cake

Used all butter instead of the shortening. Decided to stick to the almond extract since it was what made the recipe different. Received raved reviews. The cake turned out awesome. Keep in mind that CAKE FLOUR is not the same as ALL PURPOSE FLOUR.

This cake is so moist. I made it as is and used Ghirardelli chocolate. It is such a dense cake, but so moist. Thanks for sharing!

Chicken Fried Chicken

Reviewed: Feb. 15, 2007
This recipe is amazing!!! I made it last night for dinner and my husband said "ummmm----" with just about every bite. I used cracker meal sold in the store near the shake and bake. It is a box full of crushed crackers, so that helped me save on prep time. I had two zip lock bags, one with flour and seasoning and one with the mixture of cracker meal, potatoe flakes and seasoning. I just kind of eye-balled it, but I used enough flour and cracker/potatoe mixture to completely coat the chicken. The chicken breast I used were thick, so I sliced them down the middle to butterfly them and beat them like some people recommended until they were thin. (The only thing I could think to beat it with was the back of a cookie scooper, since I don't own a meat mallet.) I was surprised that the chicken coating stayed in tack. The secret is the order that you use to bread the chicken as stated by a few members. 1. Cover in flour 2. Cover in egg 3. Cover in cracker meal/potatoe flakes. It was absolutely delicious. Thank you very much for sharing!

Shrimp Etouffee II

Reviewed: Feb. 12, 2007
This recipe was AWESOME!!!!! I followed the recipe as is, but took advice from the others and added some worcestershire sauce and a bay leaf. They are both necessary ingrediants for this recipe. I agree that the 6 serving size is not accurate at all. I wish I had doubled the recipe so we could have had more leftovers. Definitely a keeper!!!!!

Spinach Stuffed Chicken Breast

Reviewed: Mar. 24, 2006
I made this for dinner last night. Did as previously recommende and sauteed the spinanch in butter and garlic. Seasoned to taste and then put in a bowl and mixed in the sour cream and pepperjack cheese. I also microwaved my turkey bacon ahead of time and added it after the initial 35 cook time. My husband gave me a 10 for presentation and another 10 once he tasted it. This dish looks really nice but is so easy to make. Thanks for sharing!!! I loved it.

Caramelized Baked Chicken

Unfortunately this recipe didn't work out for me. It came out pretty gross. My husband ate one piece and the rest has been sitting in the refrigerator because I couldn't bring myself to throwing out the chicken right out the oven.

Pepper Steak and Rice

Reviewed: Sep. 13, 2004
This recipe was absolutely fabulous! I followed everything as stated, however I added fresh mushrooms. Every Sunday I ask my husband what he would like for dinner and he never tells me, but this one time, he said, "too bad you don't know how to make steak and gravy." I knew where I could find a recipe and it came out great. He went back for seonds. And the gravy was so flavorable, I ate rice, gravy and mushrooms while I waited for him to get home.....
