Honey Mustard Grilled Chicken

this was probably the best chicken i've ever made. i doubled the sauce and set about 1/3 of it aside for dipping. i let the chicken marinate for about 45 minutes while the grill got hot. i turned it about every five to seven minutes and basted the chicken with each turn. i generally cook my chicken on a lower heat when i'm basting so i can keep adding layers of flavor. this was a huge hit and i sliced the leftovers and used in a honey mustard wrap. just made it last week and i am making it again tonight for a neighbor.

Pesto Tomatoes

wow. what a delicious surprise!! i used salt, pepper and garlic powder on the tomato halves before filling them with pesto. also, i had a friend over who isn't super fond of pesto, so i put some fresh mozzarella in her tomato then just a touch of pesto and covered it with shaved parmesean. what a delight these were! can not wait to make them again.

Homemade Black Bean Veggie Burgers

i have never made black bean burgers before and i made these last night. i always modify recipes a little bit, and this was no exception. i added some extra bread crumbs as the mixture was still a little too wet with only half a cup. also, instead of thai sauce, i used tabasco and i used two teaspoons. next time i'll definitely add some extra seasoning, but only because that's how i cook. it was delicious the way specified. had it on whole wheat buns with a slice of tomato, sour cream and some green chiles. can't wait to get home tonight for leftovers!!!

Brown Sugar Smokies

these were AMAZING. i didn't do the whole recipe b/c there were just a few of us eating, so i think i only did half of the package of little smokies. i didn't measure the brown sugar at all, just made sure that everything in the pan was covered and it was so wonderful! people at my dinner party thought i was a genius. definitely needed to be taken out of the pan (i didn't have a roasting pan) and put on a paper towel for a few minutes before being put on the serving dish to let some of the extra grease and syrup drip off. will DEFINITELY make these again.

Billy's Favorite Smoky Collard Greens

the sweetness was a bit different, but still very good. i added tabasco to mine and had to cook them for a longer than the 30 minutes required (more like 45-55) to reach desired tenderness. over all though, they were very flavorful and a huge hit at the dinner table.

Jackie's Special Meatloaf

this was so delicious and moist!!! i did a couple things differently, but nothing major. first, i put the entire 3/4 cup of ketchup in the meatloaf and i just brushed the top with some extra. also, i put half of a chopped white onion and three chopped cloves of garlic in the meatloaf. i love onion and love it even more in my meatloaf. this was my first time using a recipe other than my grandmother's and i LOVED it.
