Egg in a Hole

My kids love this for breakfast. We call it Egyptian or Camel Eye Toast. We make it more fun by using a shaped cookie cutter to cut out the hole. I fry it hard (by breaking the yolk and moving it about) for one daughter and leave it runny for the other. Their favorite part is the little piece of leftover bread that is buttered and toasted.

Egg Drop Soup (Better than Restaurant Quality!)

This got my daughter's big seal of approval. Awesome soup!!! Loved the amount of egg! Gave it 5 stars, though, because we like it a bit thicker so I added a bit more cornstarch (3 tsps. extra for double the recipe) and we added corn. Will definitely be making this again! Will be adding mushrooms and tofu like the restaurant down the street!

Queenie's Killer Tomato Bagel Sandwich

LOVE bagels with cream cheese and fresh tomatoes!!! My favorite variation is a toasted green chile cheese bagel with veggie cream cheese and the tomatoes -- sliced thick!!! Or if you are unable to find green chile cheese bagels, a slab of green chile or a drained can wrok almost as well! YUMMY!

German Pancakes II

This is one of my families favorite breakfast meals and something I had never tried until I got married and my mother-in-law made it for me! How I lived for 23 years without it I'll never know. ;o) The only change I make is I use 1/3 cup butter because we like the buttery taste when we smother it in syrup. It's a very versatile dish and is great with sauteed apples and cinnamon or fresh fruit. Definitely one to try and keep on hand!

Comfort food!!! Rated it 4 out of 5 because although I grew up eating a dish very similar to this and now make it for my family, I have never had it with peppers. We add a can of corn instead. DELISH!!! and SO easy! Worth keeping and extra sausage or Kielbasa in the freezer for a quick dinner. We will definitely have to try it with the peppers!

Wilted Lettuce Salad

Gave this 4 out of 5 stars only for the fact that it is not wilted lettuce salad without sliced radishes and a sprinkle of hot pepper/vinegar sauce! A definite summertime treat, especially when made from homegrown veggies!

Buttermilk Syrup

I use a recipe that is very similar to this one (minus the corn syrup and half white sugar and half brown sugar for a deeper flavor) and we love it!!! We eat it on french toast casserole, bread pudding, ice cream, tires. ;o) It is simply decadent and wonderful! Definitely a keeper and something a little out of the ordinary to serve when you have guests.

Mostaccioli with Spinach and Feta

Sauteed Sweet Plantains (Tajaditas Dulces de Platano)

These are some of my favorite things to eat. However, I learned to make them without the sugar and would eat them for breakfast (or lunch, or dinner, or for a snack) cut into a bowl of rice. CANNOT wait to try them with the brown sugar!!!

Tostones (Fried Plantains)

I first had tostones in New York out of a food car and I LOVE these things!!! They are so good. We aways eat ours with ketchup, kind of like fries. Dfinitely something for everyone to try. Remember when making these to use the GREEN (unripe) plantains.

Italian Seasoning II

For me personally, this was just okay. It had too much sage in it for MY tastes, so if you are not a sage lover cut down on the amount by at least half. Or even replace the sage with something you like more. That is just my personal taste opinion.

Apple Puff Pancake

SO YUMMY! We love German (Puff) Pancakes at our house and with a couple of apples hiding in the crisper, I just had to make it. I followed this recipe, using the changes that Caire suggested, I only used 1 cup of milk (which if normally what I use when making German Pancakes. It was fantastic -- warm and custardy and appley. With salty bacon and cold milk, it's a great Brinner (breakfast for dinner) meal.

Chocolate Chocolate Chip Cookies I

This was awesome!!! My kids who LOVE chocolate couldn't get enough--neither could my husband. I did use half white sugar and half brown sugar and the cookies turned out perfect, tasting great even several days later.
