White Castle Turkey Dressing

Reviewed: Nov. 26, 2009
A guest coming for Thanksgiving is a White Castle freak because he lives in L.A. and can't get them. I made this dressing to surprise him, even though I was a little wary of the idea. Turned out it was delicious and you couldn't even tell it was made from hamburgers. So odd how it just ends up tasting like dressing in the end! I would add more chicken broth next time, only because mine was a little dry.

Chess Pie

Reviewed: Nov. 20, 2007
This is a very good Chess pie recipe, but I did modify it to resemble the pies of my youth. I have never heard of using evaporated milk, so I substituted buttermilk instead, and I also used 1 C white sugar, 1 C brown sugar to cut down on the sweetness. I did follow the advice of some of the other reviewers to guarantee my pie filling set up nicely. I heated the oven to 450 F and once I put the pie in, immediately lowered it to 350 F. I ended up cooking mine for 50 minutes and left the pie in the oven the entire time it was cooling down. Afterwards, I put it in the fridge for 15 minutes, and it turned out the perfect consistency. Since this pie has to cook for so long, I would recommend putting tinfoil over the exposed crust, unless you like the edges browned. My husband prefers browned crust, so I just brush mine with half-and-half before cooking and leave them uncovered.

Perfect. Buttery and delicious. Makes any pie from fruit to cream even better.

Scottley's Basic Yellow Cake

Reviewed: Nov. 20, 2007
This yellow cake was very flavorful, but mine came out a little dry. I never have that problem, but I will try reviewers' suggestions and use all-purpose flour and a little extra milk next time.

Peach Pie the Old Fashioned Two Crust Way

Reviewed: Nov. 20, 2007
This is the most delicious peach pie recipe out there, but the trick to push it over the top is to make a homemade pie crust. Never, ever use store bought! It will only add a few more minutes to your prep time, and it's SO worth it (search Mom's Pie Crust for a simple, old-fashioned recipe). I also sometimes make this pie with 3 C peaches, 2 C blueberries, but you can really make it with any fruit combination. Just make sure to adjust the sugar accordingly if you use something sour. It's a winner, and if you decorate it with a nice lattice top homemade crust, people will beg at your feet for more of this pie.

Old Fashioned Strawberry Pie

Reviewed: Nov. 20, 2007
I agree that you need to modify this recipe to make it work, but with some changes it is a delicious pie. Per several suggestions here, I decreased the cinnamon to 1/4 teaspoon and added 1/4 C cornstarch. Also, depending on the sweetness of the strawberries, you might want to decrease the sugar to 3/4 or 1 C.

Raw Apple Cake

Reviewed: Nov. 20, 2007
This is one of the most delicious, moist cakes you will ever have. I followed suit of other reviewers and made the cake with healthier ingredients. I used non-sweetened applesauce instead of oil, 1% milk, and I only made half the frosting, using Neufchatel cream cheese. Even using the "lite" ingredients and less frosting, it was still creamy and decadent. It was so delectable everyone went back for a second piece, thus defeating the purpose of making it lite!

Ashley's Chocolate Chip Cookies

Reviewed: Nov. 20, 2007
I gave 4 stars only because (per other reviews here) you MUST add ½ teaspoon baking soda to this recipe for the cookies to turn out right. With this addition, I have found this chocolate chip cookie recipe to be the best I’ve ever made, and people go nuts over them every time I serve them. I think it’s the 2 full cups of chips that does the trick, and I always use high-quality MILK chocolate chips. They are slightly more expensive, but it really does make all the difference in the world. I have wowed so many people with these cookies that I’m asked for the recipe all the time. I wish I could take the credit for it!

Citrus Cabbage Slaw

Reviewed: Nov. 20, 2007
This gets rave reviews every time I serve it. It’s the perfect cool and refreshing side dish for those hot summer cookouts, and it’s not full of fat like traditional coleslaw. The first time I made it, I didn’t have cauliflower in the house, and it is just as delicious without it. I also use English mustard or Dijon instead of regular “ballpark” mustard, and I think this gives the coleslaw a sweeter, tangier taste.

Kim's Ultimate Meatloaf

Reviewed: Nov. 20, 2007
I made this meatloaf with ground turkey and it turned out delicious. The flavor is unexpectedly sweet and tangy – not at all like the typical thick, ketchup based sauce that coats most meatloaf. I had never tasted one with a brown sugar/vinegar sauce before, so at first bite, the flavor threw me off. It really grew on me though, and now this is my go-to recipe. Just beware if you're expecting mom's downhome meatloaf, because this is much more exotic.

Cannoli Cake Roll

Reviewed: Aug. 27, 2007
The only way you could not LOVE this cake is if you just don't make it properly. It sounds complicated, but is actually very easy if you follow the well-written instructions. You will wow your friends and family with this recipe! In Chicago we have a bakery that makes a famous cannoli cake, and EVERYONE that tasted this cake said it was better than the bakery's version. My husband loves pistachios and cannoli, so I made this for his birthday and he swore it was the best cake he had ever eaten. I highly recommend this recipe!
