Mini Pineapple Upside-Down Cakes

These came out great! The kids couldn't get enough of them, and are even ready for me to make them again! I used the Pineapple Supreme cake mix with water instead of juice. We used jumbo muffin tins for a more personal dessert.

The Best Chicken Fried Steak

I used the 'make your own buttermilk' trick and I don't think it worked for me. The steaks tasted like the flour wasn't cooked enough (although the meat was done), and they seemed quite greasy. I didn't have vegetable shortening and just used canola oil. I would try them again with real buttermilk and I would let them drip dry on a rack so they aren't so greasy. Also the gravy wasn't so great, needs work.

Special Deviled Eggs

Something was off with these. I love horseradish, I love mustard and I love sweet pickles; so I'm not sure why I didn't love these!?! I would definitely try again and mess with some of the ingredients.

Di's Delicious Deluxe Deviled Eggs

These were eggcellent!! Exactly what a Deviled Eggs should taste like. A great way to use up eggs. I put the filling in a sandwhich bag, cut off a corner and piped the filling into the egg whites. Don't forget that older eggs work best for peeling!

Angel Food Cake III

We made all different sizes; the kids liked the cupcake size. I wrapped the cakes in wax paper and froze them; they defrosted great and tasted the same!

Garlic Crab Legs

Chantal's New York Cheesecake

This cheesecake was easy to make and came out wonderful! I used 15 whole graham crackers and it was too much crust for me. I also omitted the milk and reduced the flour to 3 Tbs. The directions do not say to bake the crust, but I think next time I will. I did not use a water bath and the cake looked wonderful, not one crack!
