Broccoli and Cheddar Quiche

This is a regular for our vegetarian family. I change it around to suit our taste, but this is really a great recipe. I saute some garlic with the onion. Also I add a few Morningstar breakfast patties microwaved to soft to the egg mixture, some spices (thyme, oregano), and whatever else I'm in the mood for. This is really a nicely moistened quiche the family looks forward to. Now if we could find a recipe to make the kids finish their homework...

My Favorite Sloppy Joes

Sloppy Joe's were the request for the day. I use MorningStar crumbles as we're meat free. The liquid smoke and Worcestershire sauce are great additions. I always use fresh chopped onions sauteed first, and a clove or two of garlic. Also, I 86'd the beef broth and exchanged it with water. This was pretty good, but I like less ketchup and sugar, and more tomato paste.

Spanish Rice Bake

Sorry to say this wasn't as good as I'd hoped. My rice didn't cook very well, even though I'd kept the dutch oven on med-low (the low end) without opening the lid. It could have used more liquid as well. I was hoping for a better result, but you can't win them all. I suppose the leftovers might be good as an omelette filling.

White Chocolate Raspberry Cheesecake

Being a cheescake novice, I managed to impress all who tasted my creation. I used blackberry preserves heated in the microwave to save a step, and could have turned off the oven 15 minutes before baking time. It browned a little, and after I turned off the oven, I kept it in to cool down about an hour. Was AMAZING... but def a "special occasion" thing (my hips say)... Thanks

Blueberry Cream Muffins

Delicious. I only made a couple adjustments, basically due to ingredients I had on hand. I used half sour cream, and half vanilla yogurt (which actually tasted awesome). I also used half white sugar and half brown. Also half oil, and half applesauce (just couldn't do it). I think I used one extra cup of blueberries, and I sprinkled the top of the muffins with a sugar/cinnamon mixture before I baked them. These were TOTALLY AWESOME. I'm going to bake more for school lunches now!!

1-Dish Taco Bake

Hooray!! My kids LOVED it, and it was soooo easy. I used leftover veggi taco meat. Instead of the corn bread topping, I used just a regular flour. Also used leftover tortilla chips (which I was happy to have a use for instead of them going stale). Very tasty.

Penne Primavera

A very flavorful light dinner, perfect for summer. I gave it 5 stars because it was quick, easy, few ingredients, and great leftovers. My kids, marinara junkies, seemed to like it, but I could just as easily put their red sauce on top of it. Thanks for sharing.

Amish Breakfast Casserole

Mouth-Watering Stuffed Mushrooms

Really really good, and pretty easy to make. I did not add the cayenne (have kids who think pasta sauce is too spicy!), but added black pepper. Will used portabello mushrooms next time. Very good.

Leek and Cheese Quiche

Really Really liked this one. I only used 3 eggs since I didn't have deep dish. I used 1/2 and 1/2 rather than cream. Changed the cheese to mozzerella and cream cheese with chives (that's what I had). I know I fiddled with the recipie, but it suited my taste perfectly. Looked very nice as well.

Baked Potato Soup V

Quite good. Mine was a bit thick, but that was prob due to reading the directions wrong and adding too much flour. I used 3 cups milk and 1 cup water (I had halved the recipe) to cut down on creaminess. Also added a couple cloves of minced garlic. Still, tasted just like a baked potato. Kids wouldn't eat it, but I think they just didn't like the look of it.

Crispy Barbequed Tofu Slices

If I could give this 10 stars, I would. I've been a non-tofu enjoying veggi for about 15 years. I'm always hopeful when I find a recipe that could disguise it's "tofu-ness". This was AMAZING. My husband ate the entire plate, minus the 3 I quickly grabbed before he inhaled them. My 3 year old LOVED them (he managed to get 1). I baked the tofu after I brought it out of the freezer as was suggested. I will make these over and over and over... THANK YOU!!

Vegetarian Quiche

So impressed with the flavors. The curry and cinnamon are amazing, subtle yet flavorful. I added more spices (garlic salt, onion powder, paprika). Also added a bit of sour cream with the cheese for a richer flavor. Smelled so good, I went ahead and made one for the freezer! Really delicious!!

Cheesy Sausage Zucchini Casserole

Even got the kids to try it!! Made a few changes. I doubled the rice and used 1/2 brown. Added Sazon seasoning from Goya to that. In a pan I sauteed onion and garlic and added tomatoes. Then I substituted broccoli (didn't have zucchini in the house!!)and cut up some fresh mushrooms really small (kids again). Threw in veggi chorizo and used both fresh chedder and the mexican velveeta (about half). To be honost, I had bought the velveeta at a buy one get one free (hadn't tasted it in years) and was thrilled to find a recipe to use it since I discovered I no longer liked it. It was GREAT in this recipe. I really suggest keeping it in. I put the rice layer on the bottom, and put the chorizo layer on top of that in the casserole dish rather than mixing it all together. I added the fresh cheese on top and baked for like 15-20 minutes (until the cheese melted and I could get everyone at the table). It was fantastic. Even better the next day. This recipe inspired me to plant some zucchini's in the garden the next day. Can't wait to try it out with them. Thanks!!!

Vegetarian Bean Curry

This recipie had a good flavor, although I had to add a little more curry powder than called for, prob since I added a few cut boiled potatoes. Also, I chopped up some carrots and let the curry simmer with about half a can of coconut milk. I only needed one can of tomatoes for the flavor I wanted. Also, I didn't have just golden raisins, so I threw in a mix of the golden raisins, dried cherries, dried blueberries, and dried cranberries. I liked it!!

Seven Layer Tortilla Pie

The flavor was great, but my bottom layer of tortillas were a bit soggy. I had even precooked them as others had suggested. It may have been my fault, as I added rotel instead of the tomatoes and also substituted the black beans for chili beans and the pinto beans for refried black beans. Actually, I only used one can of the chili beans. Also I added fresh sweet minced onion on top of each refried bean layer (what should have been the pinto beans)before adding cheese. On top of each chili bean layer (what should have been the black bean layer) I addded enchilada sauce, and also on top of the whole thing. That may have been the cause for my sogginess, I just didn't want it to be too dry. However, when I reheated them the next day in the toaster oven, it seemed to clear up the sogginess. They reheat really well as long as you have already pre-cut the pieces. Very pretty!!!

Best Spaghetti Sauce in the World

Very tasty. Made a few alterations, but that's being a veggie. First, I sauted some onions with the garlic. Also, I used veggie stock instead of chicken, and I skipped the dry vermouth. Very nice flavor, and fresh basil is always such a pleasure. Thanks for the recipe.

Brussels Sprouts with Mushrooms

Very good. After reading some other reviews, I also added garlic, veggi bacon, and onion to the butter (and olive oil mixture). It was really good, especially since I am not a brussel sprout fan. My husband practically licked the serving bowl clean, although my kids wouldn't even touch it. They were mortally offended that I added sprouts AND mushrooms to their dinner plate. Oh well, what can you expect? =)
