Apple Crisp II

This was a very yummy apple crisp. It was a big hit with my husband and two boys. We had it tonight with a scoop of vanilla ice cream on top. Based on other reviews I decided to use less water - probably around 1/4 cup, and I could have used even less. It thickened more the longer I let it sit, but it was still pretty thin for my tastes. Also, it was extremely sweet (and I even used all Granny Smith apples, which are very tart), so next time I will probably cut back some on the sugar. That's really a matter of preference, though - some people like it sweeter than others! Plus, I thought the apple to topping ratio was good as is. Any more topping would have definitely been overkill in my opinion. All in all, this was excellent, and I'll definitely be making this again and again! Thanks for the recipe!

Lemon-Pepper Salmon II

This salmon was moist and very tasty. I probably would have given it 5 stars because my 5-year old and I really enjoyed it, but my husband was only so-so on it. (although he doesn't much care for salmon anyway). I had frozen salmon fillets, so I followed other reviewers suggestion for baking it at 425 for approx. 15 minutes, then broil it for a few more minutes. It never dried out, as frozen salmon sometimes does in the oven. Delish!

Shrimp Etouffee II

This is such good etouffee! I made a few small modifications: I made it on the stove top instead of the microwave. I sauteed the veggies in butter (not margarine) until they were tender, then added all the remaining ingredients and seasonings and let that cook for about another 10 minutes or so. To the seasonings, I added a few dashes of Worcestershire sauce, a bay leaf, some cajun seasoning (to taste), and to thin it out a bit at the end I added some white wine, about 1/4 to 1/2 cup or so. It really adds a lot of flavor. My husband (who is cajun) even gives this recipe 5 stars, and he's picky about his cajun food! Definitely a family favorite now.

Salad with Artichokes

This is a deliciously different salad. The flavor of the artichokes goes really well with the dressing. As written, the recipe makes a lot of dressing. I actually cut the amounts called for the dressing in half, and it was plenty. I will definitely be making this over and over again!

To Die For Blueberry Muffins

These muffins turned out great. The only modifications I made was to use brown sugar instead of white sugar for the topping as some other reviewers suggested, and I added about 1/2 tsp vanilla. The flavor was great and the topping was really good too. I made 12 regular sized muffins instead of 6 or 8 jumbo sized, and I baked them at 400F for about 20 minutes or so. Delicious!
