Cake Balls

Ok,this is the only review you need to read.I have the tips to solve all the problems. Make your cake in 2 round cake pans, take them out of pans,put on wax paper for 30 mins.Crumble COMPLETELY in bowl & add a dollop of frosting at a time.Mix well after each dollop until you can roll a ball around in your hand like making meatballs.Don't be a ninny and add the whole container, you'll be sorry you did.If frosting is added a bit at a time, you will have the chance to stop at a good rolling consistency that will stick together and you wont need all that 'put in the fridge or freezer before you coat them with chocolate' nonsense.Use regular choc morsels,melt them in the microwave under watchful eye at about 50% power,checking & stirring every 10-15 secs or so.Solve the toothpick or fork dilemma by simply putting them in a round foil cake pan 1 in. apart & coaxing the chocolate over the top and down the sides with a spoon. Stick in the freezer for 30 mins to set and you have a disgustingly orgasmic dessert that will make others draw back a nub if they try and touch one while in your hands. My FAV-Dark Chocolate Fudge cake w/milk chocolate frosting and half/half milk chocolate morsels & Andes mint chocolate pieces for the coating. I also pushed a maraschino cherry coated in white chocolate glaze into the middle of the balls, & stuck a sliver of Dove dark chocolate into the top before coating. I am sitting here now with chocolate all over my lips with a nasty Cheshire cat grin!! ;)

Really good recipe, didn't change a thing. Was a bit softer than I like my Biscotti, definately softer than my Nonna made-- but really tasty anyway!

Festive Shortbread Logs

Let me tell you--- INCREDIBLE shortbread cookies! The kids and I had a blast decorating them up with white and dark chocolate, colored sugars, and 4 different kinds of nuts, to include in our Italian Cookie Boxes for Christmas gifts --right along with all the authentic Italian cookies we make every year. They got rave reviews and ALL 25 BOXES sent returned to me a phone call that requested your recipe!! Perfezione assoluta!! Ottimo lavoro!! Thank you!

Snow Ice Cream II

This recipe is awesome. I remember it as a child as well. My Nana or Aunt would put a big bowl outside during the first snow of the year in NYC, when the bowl was full we'd celebrate with Snowcream. :) (we add double the vanilla though-- and a dash of cinammon-- my Dad liked a half cup of italian espresso added)-- one hint? Use a stainless steel mixing bowl. It won't melt while preparing it. And use an actual GALLON of snow-- or yes, the vanilla will be too powerful.

Fish Fillets Italiano

Oh my. So good. I substituted lemon juice for the white wine as I had none in the house. And still, incredible.... This is my 4 yr old's favorite dish, he says not ONE word until his plate is clean. Served over basmati or cut up spaghetti. Delicioso! Thanks Bonnie ;)

Brown Sugar Meatloaf

Chocolate Peanut Butter Pie

Cut down the sugar to 1.75 cups, the milk down to 1.5 cups and mixed softened cream cheese in with the peanut butter mixture to make it more creamy in consistency to be more palatable with the pudding. Oreo crust. Crushed skor bar for the top. 5 stars.

Sausage Jalapeno Poppers

Very good recipe as it is. I have also made this with a few changes-- sour cream instead of cream cheese makes it more savory than sweet, added pepper jack cheese, white cheddar and sharp cheddar into the sausage mix. Added cayenne, cajun, onion powder & minced garlic for more spicy pop. Also wrapped in one whole slice of hickory smoked bacon intead of half & baked on a rack so that they don't sit in juices and get soggy. Thanks for the great recipe!
