The sauce was very runny and didn't stick to the chicken. It was bland.

Coconut-Curry Lentil Stew Served over Quinoa

Reviewed: Jun. 8, 2010
I used canned lentils, so I omitted the water. I added the lentils at the end, when the stew was the thickness I like. I added dark brown sugar instead of molasses. I blended shredded coconut to make it like a powder. Thanks for a great recipe Lindsay!

Quinoa with Chickpeas and Tomatoes

Reviewed: Jan. 18, 2010
I used cilantro instead of parsley because I love love love cilantro. I also added a bit of lime zest. This was my first quinoa recipe, I usually eat quinoa as a rice substitute or cook it half and half with rice, so it is nice to try new things with it.

I used milk instead of cream, and I boiled 2 chicken breasts and shredded them instead of diced. I added tones of cilantro to serve. I added twice the cumin and some chili powder.

Curry-Coconut Shrimp

Reviewed: Apr. 5, 2009
I followed AGLIKA's suggestions and made this. I make alot of curries, and this one was easy since the ingredients are all things we don't have to run to the grocery store for. I like my food spicy so I added a green chili, seeds and all to the blender. I also didn't measure my coconut milk, I just added 1 can.

French Onion Soup Gratinee

Reviewed: Mar. 14, 2009
I love-love-love this recipe. I use different cheeses than it states. The magic in this soup is not the cheese, it is the carmelized onions and broth. Follow the carmelizing instructions!! I never actually have 2 of each onions when I am in the mood for making this soup, so don't worry too much about that.

Pesto Pasta with Chicken

Reviewed: Sep. 24, 2008
I have made this so many times! People ALWAYS will ask you for the recipe! The pesto sauce I use (classico brand) has tons of garlic, so I don't add any extra. Using bowties is a good idea, the sauce sticks good to this shape. The sundried tomatoes in oil are the best, chopped small, with a little extra drizzle of the oil. Adding fresh parmesan makes it happen! Makes lots, cause it gets gobbled up!

Pineapple Enchiladas

Reviewed: Sep. 24, 2008
I have been meaning to try this recipe for quite some time now. I added a shredded chicken breast to the pineapple mixture. I like my food with a bit of spice, so I added one red chili. I used plain yogurt instead of sour cream. Yummy! Easy to make!

5 stars because it was easy and great tasting. I dropped my peaches in boiling water for a quick minute to make them easy to peel. I used splenda instead of sugar.
