Downeast Maine Pumpkin Bread

Reviewed: Nov. 26, 2008
This recipe is fabulous, but I only gave it 4 stars because I made some changes to make it healthier. I substituted applesauce for the oil and used white whole wheat flour and brown sugar; I made these into muffins (bake about 20 minutes) to offset the density caused by using the applesauce (as a loaf it sometimes doesn't cook all the way through). I also left out the water and just cut back on the flour. Also, if you are having trouble with over-stirring the batter, mix the dry ingredients and then stir them in by hand with a whisk until just blended.

Balsamic-Glazed Salmon Fillets

Reviewed: Jul. 9, 2008
I thought the flavors were a good idea for this recipe but wasn't so into the wine and oregano. Imade a couple of adjustments: Sauted minced garlic and scallions in a bit of olive oil, then added balsamic vinegar, honey, salt and pepper and cooked for a minute until it thickened. I poured it over the salmon fillet and baked it in the oven, then finished it off under the broiler for a minute so it got crispy on the top. Yum!

Almost No Fat Banana Bread

Reviewed: Mar. 11, 2008
This is a great recipe. I made a couple of changes based on some other reviewers--substituted brown sugar for white and reduced it to 1/2 a cup; added 1 tsp of vanilla; put in two whole eggs instead of just the whites; and baked it for almost an hour and a half so it was done the whole way through. And it was even better the next day!

Moroccan Tagine

Reviewed: Jan. 28, 2008
This recipe was a great starting point, although I did make some changes/additions after reading other reviews. I used crushed tomatoes instead of diced (it was what I had on hand), doubled the onion, and substituted sweet potato for the squash. I also added curry, cumin and cinnamon (which I think made it a little more Indian, but still really good), and put the spices in while I was cooking the chicken. It was even better the next day after the flavors had a chance to meld! Will definitely make this again.
