Jamaican Burgers

These had an unusual taste for a veggie burger but we enjoyed them. I give it a 4 because I had trouble with the patties staying together. I did substitute ground oats for the bread crumbs which maybe could have caused the problem. If you are looking for something different yet east, this recipe is great. If you are looking for something resembling more of a "traditional veggie burger" this may not be the recipe for you.

Roasted Vegetable Lasagna

This was very good. I would have used a little more sauce but I only had the one jar or I would maybe even have cut down some of the ricotta. I would have preferred to taste the vegetables a little more. That said, I thought it was great as written and would make it again.

Carrot Cookies III

These weren't quite what I was expecting but they were very good. I have a very picky eater so I am always tried to disguise vegetables whenever possible. I followed the recipe and thought the orange glaze was a must. Next time though I think will add the orange straight to batter and cut out the confectioners sugar. I thought the zing from the orange was a necessary component.

Banana Oat Bars

I made some substitutions for these and made them as breakfast bars. I used ground flax seed and water as an egg subsitute and substituted 1/2 maple syrup and 1/2 agave nectar for someone with senstivities to refined sugar. Because of all the liquid, the batter was pretty gloppy so I added a few tablespoons of whole wheat flour. For what i was looking for, they came out great. Since I wasn't looking for a cookie or cake recipe, I may have had different expectations than others. I am sure I will make these again for weekday breakfasts.

Vegetarian Lentil Spaghetti

I was a little unsure as to whether this recipe would have enough flavor but I was pleasantly surprised. It was very easy to throw together on a week night. I didn't have any sesame seeds and used a little chopped yellow onion in place of the green. It was a nice hearty easy meal.

Orange Spiced Carrots

This is a great variation on plain carrots. We ended up with an enormous of oranges and I was looking for some recipes that called for more than just orange zest. I used fresh orange juice but didn't have any parsley on hand. My mother, who doesn't much care for carrots, ate two helpings at dinner. A definite repeat recipe.

St. Patrick's Day Zucchini-Oatmeal Cookies

These are pretty good little cookies. I was able to sneak the zucchini past a very picky three old which is always a plus. I took the advice of other reviewers and reduced the amount of chocolate chips to 1.5. Frankly, my family must have an unusually strong sweet tooth because we probably would have been happy with the 2 cups.

Vegetarian Meatloaf with Vegetables

This was very good and a nice change of pace for a family that hasn't eaten meat in over 10 years. I did substitute 2tbsps ground flax seeds and water for the two eggs but followed the recipe otherwise. I would definitely make it again both as written and/or with variations.

Creamy Chocolate Frosting II

I thought this frosting was just OK. It was very easy to make which is a plus but it set very quickly and became very hard. I guess I prefer a creamier frosting. Maybe I should have added even more water. I also thought the taste veered towards sugary sweet rather than chocolatey. I would make it again in a pinch but wouldn't be my go to frosting.

Secret Kiss Cupcakes

I made these for valentine's day for my kids and others. They were good and I didn't have any problems with the kisses sinking to the bottom. I did toss them in a little flour before I pushed them in which may have helped. For me, the batter was VERY thick. Overall, a good cupcake. I got 27 out of the recipe. I would scale it to 24 next time for convenience.

Raspberry Oat Bars

Everyone at work loved these. I added a couple of tablespoons of unsweetened applesauce and it wasn't crumbly at all. Because it was just easier to soften two sticks of butter, I increased the total of amount of crust by 25%. Perfect! Now that I know how good they are this way I may try to experiment to make them a little more healthy.

Oatmeal with Apples

I followed this recipe exactly and thought it was a great way to start the morning. I used a granny smith apple. I found it plenty sweet and may even try diluting some of the apple juice with water.

Simple Whole Wheat Bread

Finally, I made a yeast bread that turned out well. I took earlier suggestions and put a pan of water in the oven while cooking but otherwise I followed the recipe exactly. I was determined to get a decent loaf. I somehow only ended up with two loaves but that was fine with me. I wanted something large enough for sandwiches. I prefer a more "wheaty" taste to my bread so I will probably adjust the ratio of wheat to bread flour next time. As I can attest, a great loaf for beginners.

Whole Wheat Beer Bread

This bread was pretty good. I used all whole wheat flour and a pumpkin ale. It was so simple that I will probably try it again with some changes. I think I will try the gingerale suggested by another reviewer and maybe a combination of flour. It was good my way but could be improved.

Playgroup Granola Bars

OK - as did many others before me, I made some changes to fit our needs. I substituted a mashed banana for the egg. I added 1/2 c applesauce with 1/4 c. oil and reduced the sugar to slightly less than 1/2 c. I also added 1/2 craisins with the raisins. I baked for 24 minutes in an 8in pan and they were great. Very moist and chewy. Will definitely make again and will probably double the recipe.

Vegetarian Tortilla Stew

Very easy. I used 2 cups of vegetable broth and used black beans instead of corn. I also omitted the "chicken" strips. It tasted good the next day for lunch as well as fresh at dinner. I would definitely make again.
