Grandma's Hash Browns

Outstanding! Very easy, very crispy and tasty - just the way they should be. And, I'm a huge fan of getting some of the work done the night before. All I had to do was shred the potatoes while the coffee was brewing.....then fry them up while getting some scrambled eggs prepared. Nice and easy. Thanks for sharing this!!!

Red Lentil Curry

This dish ultimately was very good. I did not realize that red lentils cook so quickly - mine were mush within ten minutes. Also, I would have been wise to learn from other reviews which made reference to reducing the amount of curry paste. It was so spicy that my husband was not able to eat it. The flavor, however is right on. I will definitely make it again (probably when hubby is out of town).

Tofu Parmigiana

Eggplant Parmesan II

I was so pleased with this recipie! I was a bit hesitant to try it, as I've tried other eggplant dishes that have come out horribly, but this one is a keeper! Took a few extra minutes to make some fresh sauce - this dish burst with fresh flavors. Thanks!

I have made this recipies several times, and each time, people rave about it. The only thing that I have found to improve upon it is the addition of Pine Nuts - very satisfying dish.

Home-Style Brown Rice Pilaf

I enjoyed this recipe very much. There is a lot of prep work involved, but it is worth it. I used almonds, and forgot about adding parsley or cilantro - but it came out fine. Keeper.

Melt - In - Your - Mouth Shortbread

My family did not enjoy these cookies. I would recommend testing this recipe before including it with your annual Christmas cookies. I have decided to dip them in fudge and nuts to salvage them.

Easier Chicken Marsala

Delicious! I've made this several times, and haven't gotten tired of it. The last time, I was out of Oregano, but substituted Thyme and it came out wonderful. I usually serve it with roasted potatoes and creamed spinach. Thanks!

Four Seasons Enchiladas

What a wonderful way to use up some of that left over turkey! I used light cream cheese and reduced fat cheddar, and there is NO difference in taste - in fact, you could probably get away with fat-free cream cheese. Very good!

Can't Get Enough Caramel Cookies!

I'm surprised to hear myself say this, as I love almost anything that can be classified as a cookie, but this was disgusting! The whole pan went directly into the garbage can.
