Taco Salad III

Reviewed: Oct. 18, 2011
Loved this salad! I mixed kidney beans in with my meat then mixed the meat mixture with the avocado, cheese, and tomatoes and put this on a bed of lettuce with the chips and dressing on top. This allowed for the meat mixture to be saved for leftovers without getting soggy. I'm making this again for dinner tonight!

Garlic and Leek Ditalini

Reviewed: May 18, 2011
So simple and so delicious! Made with rotini instead of ditalini and double the amount of sauce. Served with bbq'd tri-tip and my husband and I both thought the pasta outshined the tri-tip! Will definitely make again!

Slow Cooker Carnitas

Reviewed: Jun. 23, 2010
These carnitas are my new favorite thing ever! Better than any carnitas I've ever had in a restaurant! Followed the recipe, except I didn't have any coriander. Also used boneless country style ribs. Also followed the suggestion for baking the meat for 20 minutes to crisp it up, just spread it out on a cookie sheet and poured some of the liquid over it then baked til the liquid evaporated. So FREAKING good!!!!!!!!!

The Best Potato Salad

Reviewed: Jun. 22, 2010
I LOVE this salad! It is my new go-to potato salad. I love the flavor from the ranch and pepperoncinis. Amazing! I've made it with red and yellow potatoes and it was delicious both ways.

The Real Mojito

Reviewed: Jun. 22, 2010
These are perfect for a hot summer day! I made simple syrup and expanded the recipe to make a whole pitcher. Used the pineapple mint growing like mad in my front yard. And I loved them! In fact, I'm making another pitcher tonight!:)

Awesome Roast Beef

Reviewed: Apr. 27, 2010
This was amazingly good. I added potatoes, baby carrots, and celery to the bottom of the crockpot and set the roast on top after salt and peppering it. When it was done cooking, I added a little cornstarch to the juices to thicken, then chunked up the roast and put it back in. This was one of the best roasts I have ever had. I will definitely be making this again!

Lime Chicken Soft Tacos

Reviewed: Sep. 17, 2009
Fantastic recipe! I threw the chicken, red onion, an anaheim chile, and the sauce (doubled the sauce) in the crock pot for a few hours, then shredded the chicken and added a can of black beans, heated it through and served it with fresh garden salsa on tortillas. I will definitely be making this again soon. Thanks!

Chocolate Wave Zucchini Bread

Reviewed: Jul. 22, 2009
Wow! This was fantastic! I made a double batch, had a little batter left over and made six muffins....I barely let the muffins cool before I had to try one, they smelled soooo good! And the flavor didn't disappoint! This recipe is delicious! I did make a couple of changes for healthiness points: used applesauce instead of shortening, 100% white whole wheat flour (from trader joes), dark chocolate chocolate chips, and an extra cup of zucchini. I will definitely make this again! Thanks for the recipe!!!

Chiles Rellenos Pie

Reviewed: Jul. 10, 2009
this is a great recipe! bought fresh poblanos and roasted them...(thanks for the tip on putting them in the bag to steam off the skin!) when constructing the "pie" I put chiles on the bottom, cheese, chicken, more chiles, more cheese, then poured the egg over top. my husband said this may be his favorite thing I've ever made! Thanks!

Fish Tacos

Reviewed: Jul. 10, 2009
this is sooooo good! The only thing I do differently is saute the fish with a little pepper in butter, garlic, and lime juice until it flakes easily (no breading)....we absolutely love these tacos! The sauce is the kicker, I've used sour cream instead of yogurt and it's fantastic! I also like to use a bag of shredded angel hair cabbage....makes it even easier.:)

Grilled Chicken Skewers with Mango and Pineapple

Reviewed: May 20, 2009
YUM!!! I've made this twice now. I didn't care for the mango the first time I made it, so this time I used all pineapple. Also used freshly made ranch 'cause I think bottled ranch is gross.:) Definitely worth making, especially when these norcal days reach the triple digits and cooking indoors is out of the question!

One-Pot Pasta with Tomatoes, White Beans and Pesto

Reviewed: Nov. 29, 2008
Fantastic and super easy! I used homemade pesto, vegetable broth, whole grain pasta, small white beans, and fresh tomatoes. Served it with garlic bread and a salad. It was so good I ate leftovers for breakfast!:) I'm sure I'll be making this again soon.
