Fried Rice I

I had extra quinoa to use and had to find a way to use the leftovers. Simply using what i had (no bacon, cooked asaparagus, chopped turkey ham, green onions), and using olive oil instead of vegetable oil for a healthier meal. I scrambled the eggs instead of cutting them up in strips. Worth trying and so easy to improvise based on what you have around the kitchen.

Creamy Tomato And Cream Cheese Soup

With a few changes it was the most delicious soup I have ever had. The first time I made it it tasted like a blended up vegetable soup more then tomato soup. So next time I made it I added 6 oz of cream cheese and an extra can of tomatoes (14.5 oz). I had found canned tomatoes with garlic (saves putting garlic in) and olive oil. For half of the broth I also ended up using stock from cooking pork I had left over. With the addition of a bay leaf during cooking and extra basil (just remember to take the bay leaf out before you blend it), it was delicious. I would recommend cooking the tomatoes a little longer and also cooking the soup in last step longer. It always seems the longer you cook soup the better it is. An immersion blender works the best and can do all ingredients together. I just softened the cream cheese in the microwave before i blended it all so it mixed better.

Easy Beef Stroganoff

It was good except it called for too much onion. I had even reduced the onion to half a small onion and it was to overpowering of a taste. Added garlic powder and lawry's seasoning while cooking the meat. Maybe would suggest a red onion or a sweet vidalia onion for a sweeter flavor.

Glazed Dijon Carrots

Yummy recipe. Its so hard to find a good recipe for veggies as a side dish that my husband will eat and say it's delicious. The dijon mustard with the sweet and ginger flavor are amazing together. Worth making any chance you can!

Broccoli Chicken Fettuccini Alfredo

Used high fiber pasta instead to make it healthier, and used mushrooms instead of broccoli. I also sauted 2 thinly sliced green onions with the chicken for a couple of minutes before I added the rest of the ingredients. Added great flavor and a wonderful green color. With the addition of garlic and pepper for flavor, it was amazing. It's not exactly fettuccini but it still tastes great. Put parmesan cheese on top to serve.

Banana Chocolate Chip Cake

Amazing recipe. I used 1 C of whole wheat flour and 1/2 C of regular flour to make it healther. Made the changes as suggested with 1 C sugar, baking soda instead of powder, 2 large bananas (1 1/2 C to 2 C of bananas), and 1 tsp Vanilla. Used 1 C of dark chocolate chips instead of semisweet because that was all I had. Sprinkled with powdered sugar when it was cooled, and it was so delicious. My 4 year old son finished a piece of this in 5 big bites if that says anything. Would make again!

Collins Goulash

Addition of the seasonings suggested for flavoring make it delicious (seasoned salt, garlic, rosemary, salt, and pepper). I add crushed garlic clove instead of garlic powder. To make this even a quicker meal, I ended up using a 16 oz. box of quick cooking pasta that cooks in 3 minutes if you are in a real pinch for time and it is still delicious. I usually use whole wheat pasta for a healthier meal for your family and it's still delicious. If your family loves mushrooms you've got to add it to the recipe, makes it even better!

Almond Rhubarb Coffee Cake

This was delicious. I substituted olive oil for vegetable oil since I was all out and added a dash of nutmeg and a dash of cinnamon. The amount of rhubarb was perfect in the recipe, not to much, not to little. I love nuts of all kind, and I personally would add more almonds on the top when I made this again! I would definetly make this again!

Quick and Easy Pizza Crust

I was looking for a quick easy recipe that still tasted good. This was one of the best homemade pizza crusts I have tasted. I ended up using half all-purpose flour/half whole wheat flour because I didn't have any bread flour. The suggetions of herbs in the crust and garlic in the olive oil worked great. I also baked it in the oven for 5 minutes before I put the toppings on it and then baked it for 15 minutes with the toppings on it. This is great recipe to try!

Chicken Avocado Casserole

My husband isn't a huge chicken fan unless it is made a certain way. He liked this recipe and ate the leftovers too! I didn't have any sherry, so I used a dry white wine instead.
