Jamaican Tortilla Soup

Yes, halve the water, double the spices (incl ginger & garlic.) Adding rice or lots of tortilla chips bulks it up. A big hit!

Chili-Lime Chicken Kabobs

This was more spicy than flavorful, it got mixed reviews at my house. I added pineapple, onions, bell peppers, zucchini, & cherry tomatoes to the mix - yum! (But had to make more marinade to cover all the added ingredients of course.)

Great recipe! I recommend adding some spices to the tomato sauce; I added chili powder, cumin, garlic powder, & tarragon. Everyone in the family liked it!

Mall Pretzels

I made this recipe even easier by making the dough in the bread maker. Rolling the dough into pretzel shapes was very time consuming, so I rolled the dough out like a pizza and cut it into strips. So easy & delicious! I've tried making pretzels using the bake-boil-bake method; this is way easier and has more accurate "mall" results! Best if eaten as soon as they're removed from the oven.

Southwestern Egg Rolls

The title and photo of this recipe led me to believe that it was an appetizer, but when I made this for my husband and I, they were more of a main dish. We could each only eat 2 or 3 because they were larger than I expected. (I used Gordita tortillas, which may be slightly larger than 6" but was still able to make 5 from the original recipe.) The only thing that tasted a little out of place was the tiny amount of spinach in this recipe, I could take it or leave it.

Chicken Noodle Soup

I've never made chicken noodle soup before, and this recipe worked perfectly! I like my food salty, but this recipe was a little TOO salty for me, I'll reduce that next time.

Fluffy Whole Wheat Biscuits

Finally, delicious biscuits without the shortening! (And whole wheat flour to boot.) I didn't think mine would turn out as "fluffy" as those shown in the photo, but they did! We will be making these A LOT!

Raspberry Peach Crumble

Delicious! I used quite a bit of cinnamon. I think the raspberries were overpowering the peaches, I'll try it with half the raspberries next time. Will definitely make again!

Peach Curry Glazed Pork Chops

Delicious! Used fresh peaches; didn't have the mustard, so I just used more honey. I oven-baked the chops and then smothered the sauce on top. Will definitely make again!

Wendy's Indian Butter Chicken

Some Indian recipes are too spice-filled for my tastes, or just have flavors that are totally unfamiliar to me, but my family & I thought this recipe was just perfect. I followed the suggestions to use plain yogurt instead of cream and I added more butter. It was delicious! (And not too strange for those who haven't had a lot of Indian food.) Plus: it was easy to make!
