Cheesy Chicken and Potato Casserole

This was great! Even got a 5 star rating from the husband who does not care for casserole type dishes. Followed all instructions along w/ parboiling the fresh potatoes but added frozen broccoli before poping in oven only because I didn't want to dirty another pot :) However I did not shred the chicken only because I have a non meat eater in the house but other than that it was wonderful, thanks for the recipe!!

Chewy Coconut Cookies

YUMMY!!! I made these on a whim and I am sooooo glad I did! Only difference, 1 2/2c flour and 1tsp of vanilla. Other than that, followed recipe to a "t". I'm sure that I'll find other goodies to add in and play around w/ them in the future as I know this has made it into my cookie rotation!!

Chocolate Chip Dream Bars

I've tried to describe these to friends and family after I made them and I've realized that there aren't enough great words in the human language that gives this dessert justice!!! It's just GOOD and you should make them, and double the recipe as ours were gone in a matter of a day. I did everything EXCEPT put a glaze on top. Only because I didn't have cocoa powder but realized that they didn't need it. So in lieu of that I put some shredded coconut on top before baking to counter the lack of sweetness the omitted glaze provided. Besides we're always looking for an excuse to put coconut on something. Anyway, SUPER easy, SUPER great, SUPER!! Going to be making them this weekend.

Oatmeal Raisin Cookies VI

I made these cookies this afternoon and my first thought before I even put them in the oven was wow the batter smelled and tasted great but it looked thin. Sure enough I was right and they ran and almost burned. So through trial and error I ended up adding about another cup of flour and baking them on a light colored sheet between 10 and 12 min. Absolutely the BEST cookies I've ever had, even my daughter who protested me making them in the first place is on her 3rd one.

Spinach Frittata

I made this for dinner one night on a whim, first attempt at a frittata and I have to say I rate dishes on the husband test. It's not enough that he went back for seconds, but he wants to eat it again! I tweaked the recipe to what I had on hand, bacon and no peppers, it still came out great. The only thing I would say is this, beat the whites and yolks separatly, and mush it down to cook the eggs on top.
