Mom's Buttermilk Pancakes

I tried this because of all the great reviews. The pancakes were nice and fluffy, but terribly salty. If you make this, cut the salt way down. These are nearly inedible. They also taste a big eggy and bland, other than the salty aftertaste. I will keep looking for a good pancake recipe.

Chef John's Blueberry Muffins

I tried these because of all the positive reviews, but was very disappointed in this recipe. The muffins were dry, not at all sweet & glaringly bland. I couldn't even taste the lemon zest. I definitely won't be making these again.

Chuck's Favorite Mac and Cheese

Quick and easy, but a little too tangy for my taste. I would try it again using only 1/2 the amount of sour cream. To reduce the fat & calories, I used 1% cottage cheese, light sour cream and topped it with Panko instead of buttered bread crumbs.

Curried Hummus

I'm not a fan of curry, but was pleasantly surprised by how good this was. The consistency was just right for dipping too. I used 3 t. spicy curry seasoning and added a dash of cayenne for some extra heat. Hubby loved it, and it would be an easy crowd pleaser for a potluck.

Zesty Slow Cooker Chicken Barbecue

I used organic BBQ sauce and added a dash of apple cider vinegar for some extra tang. The chicken was nicely cooked and moist after only 3 hours on high. I strained the BBQ liquid, then reduced it a saucepan on medium low. I further thickened it by adding 1T.cornstarch dissolved in 1-2T. cold water. While stirring, bring it to a boil then simmer for one minute. I stirred in the shredded chicken and served it over brown rice. Yum! My BBQ-loving husband had 2 helpings. This would be great for potlucks too.

Roasted Chickpeas

I roasted them without oil for about 25min., then seasoned them with sea salt and garlic powder. They were very tasty and a nutritious snack. I wrapped the leftovers in foil in the refrigerator, and they stayed nice and crunchy.

Crustless Spinach Quiche

A really tasty and easy low carb/lower fat meal. To cut down on cholesterol, I used 3 whole eggs and 6T. egg whites from a carton (equal to 2 eggs). I added 2 cloves of crushed garlic, diced ham and canned mushrooms. I also cut the cheese to 2 cups, using 1c. part skim mozzarella and 1c. sharp cheddar. My husband & I loved it!

Slow Cooker Macaroni and Cheese I

Although the edges were nice and browned, the inside was curdled. Also, the evaporated milk gave it a slightly funny taste. I liked the ease of the dish, I just wish the final product was better.

Glazed Ham

This recipe was so easy and added great flavor. The glaze packet that comes with store-bought hams has a funny, chemical taste to it, so I was very glad to find such a tasty alternative. I will definitely use this again. Thanks for a great recipe!

Banana Pumpkin Bread

Excellent! I followed another reviewer's advice RE: cutting down the oil to 1/4 c., adding 3 bananas, 14oz. pumpkin, and 11/2c. whole wheat flour & 1 1/2c. white flour. It made 2 loaves, and took a little longer to cook, but it is wonderfully moist with lots of flavor. Golden raisins and chopped walnuts really add to the bread as well. This is definitely a keeper!

Chicken and Corn Chili

Very easy, and tasty, but the cooking time needs to be adjusted. After cooking overnight and again the next day, everything ended up mushy - especially the chicken. A few hours on high would probably suffice.
