Roast Chicken with Creole Stuffing

I made this and thought it was a winner. I didn't follow the recipe exactly because I used what I had on hand. I did not use shrimp and had no ham; I had no peppers, but used a tomatilla + jalapeno sauce and the result was excellent. I'm sure it would have been just as good with the ingredients suggested..I just didn't have them and the store was too far away. Thanks.

Grilled Jalapeno Tuna Steaks

I wasn't sure I'd like this but I tried it as written and it was excellent. It was simple to do and it tasted terrific...not too spicy, just flavorful. I plan to use this marinade often.

Quick Chicken Stew

We made this tonight and we thoroughly enjoyed it. Made changes based on what we had at hand, but this is a very flexible and forgiving recipe. The flavor was excellent today and will be better tomorrow. Thanks for submitting, RAF1K123

East Carolina Barbeque Sauce

My entire clan hales from Eastern NC and I'm ashamed to admit how much pulled pork barbeque I've consumed. The Eastern NC barbeque "sauce" is mostly comprised of vinegar and red pepper and it is a marinade. It doesn't need butter, the pig supplies all the fat needed. This is NOT the real McCoy. If you go to the NC pork web page, you can find the real thing since pork is one of NC's biggest agricultural products.
